Shrimp N' Noodle Bowls


From the kitchen of One Perfect Bite...Shrimp N' Noodles is one of those recipes you reach for when the clock's run out and stomachs are demanding to be feed. It's a prize winner, though on a much smaller scale than the other recipes we've looked at this week. The challenge from Taste of Home's, Healthy Cooking magazine, was to create a dish with a handful of ingredients and have it on the table in 30 minutes or less. We did it. It didn't change the world or make us wealthy beyond the dreams of avarice but I had bragging rights for a day or so. This is a dish that is assembled rather than made. If you decide to use precooked shrimp, the only "cooking" involves boiling water for noodles. This is a really simple dish, but I think you'll enjoy it. It received some very nice reviews. Here's the recipe.

Shrimp N' Noodle Bowls...from the kitchen of One Perfect Bite.

Ingredients:
8 ounces uncooked angel hair pasta (chuka soba noodles are an excellent substitute)
1 pound cooked small shrimp
1 bag broccoli coleslaw mix
6 green onions, thinly sliced
1/2 cup minced fresh cilantro
2/3 cup reduced-fat sesame ginger salad dressing

Directions:

1) Cook pasta according to package directions; drain and rinse in cold water. Transfer to a large bowl.
2) Add the shrimp, coleslaw mix, onions and cilantro. Drizzle with dressing; toss to coat. Cover and refrigerate until serving. Yield: 4 to 6 servings.

  7. This recipe is quite alike the japanese cold noodle, except that it added in a little more flavour with shrimps. The japanese cold noodle will just go plain without any seasoning.

  12. Mary, this is a gorgeous presentation. I love all of the ingredients and the fact that they can be put together in 30 minutes or less.

    Years ago I used to make much more elaborate fare but I've slowed down my pace a bit. Most of our meals now can be done in 60 minutes or less. Now that summer is approaching I look for dishes such as this.

  19. Okay, I'm drooling over the shrimp n' noodles, we both know I love your recipes, BUT, I'm also drooling over those baskets on the bamboo stands. Those are so me, I can't believe it. I've been on google images for the last twenty minutes to see if I could find them.

    Saved the pic to send to my son to see if he can make them for me. Wow, I love them!

  27. I really should use the lettuce more often as a break from the spring roll rice paper for wrap. This is a beautiful way to "cook".

  35. Susan....a little secret. I buy what's available. I pay a great deal of attention to sell buy date. Get the freshest possible. If when I open it I find it has a musty smell I blanch it in boiling water for no more than a minute and then plunge it into ice water. I do the same thing with bean sprouts.

  42. Hi Sally, in Southeast Asia it is very common for cooking lessons to be taught outdoors. It's incredibly warm. The class in the picture was taken at a plantation outside the city of Chiang Mai in Thailand. If you look closely you can see the brown grass. Classes move indoors during the rainy season, but class sizes drop at that time of year. It can be unpleasantly humid.

  49. I am eating with my eyes here Mary. It looks wonderful. We grilled the bacon wrapped chicken thighs last night. All I needed to buy was the pure maple syrup. They were so moist and delicious. I didn't take a picture. They went too fast!
