These all look so cool and fresh. The first salad, I could not find out what courgette means, maybe I missed it. That is my favorite one.

One thing I've taught my Fiancee and his daughter is that salads don't have to be boring and tasteless. He comes from a family that were born without taste buds and treat veggies like their enemies. He grew up on the prairies, whereas I grew up on Vancouver Island with fresh gardens throughout my childhood. Nothing beats fresh veggies and salads!

One thing I love right now is Quinoa. You mention you toast them. Do you have any tips for toasting?

After a reading of 103 degrees F last week, I went nuts looking for salad meals. Then, the temps plummeted to 60 degrees F. So I bookmarked this, because I know the salad days are coming back. Of course my eyes fixated on all the noodle salads...
