Frugal Foodie Friday - Savory Sandwich Buns

From the kitchen of One Perfect Bite...Weather kept me inside today, so dinner had to be made with pantry and refrigerator items. I decided to make a huge batch of pulled pork and it was not until the pork was simmering away, that I realized I no rolls in the freezer. Yeast and flour are never in short supply here, so I decided to make the savory sandwich buns that I'm featuring here tonight. As it happens, the rolls are very inexpensive to make and it dawned on me that they would be perfect to share with you as part of my Frugal Friday series. If you have a stand mixer, you can have these rolls on the table in about 2 hours. The dough is easy to work with and it can be shaped into any form you choose. The addition of garlic salt and minced onions set them apart from most sandwich rolls and I think you'll enjoy their savory difference. Here is how they are made.

Table for Two Recipes

I thought today would be a great time to reprise some of the recipes I've featured that are designed to feed just two people. One of the most difficult adjustments to make as the nest empties is learning how to cook in smaller quantities. At least it was for me. It sounds simple enough to do, but if you've spent years feeding the immediate world, there will be many a slip 'tween the cup and the lip and lots of leftovers in the fridge to boot. I hope these recipes will ease the transition for those of you who are watching the chairs at your table empty. Here are some of the recipes I used to get from there to here.

Meatless Monday Favorites

Graphic courtesy of www.meatlessmonday.com

As you can see, I'm following my plan to share old and new recipes with you until my vision has improved and I'm again functioning at pre-surgery levels. The good news is I am out of bed and able to move about, but the eye is going to take some time to heal. I currently "see through a glass darkly" and while I can make out shapes and colors, I am not yet able to read or focus for any length of time. The situation is temporary, and I hope that in the not too distant future I'll be able to tell you that I am as fine and fiesty as ever. Thank you for all your healing thoughts and prayers. They helped tremendously. Without further ado, here are some of my favorite Meatless Monday meals.
