Deviled Eggs with Curry and Cilantro



From the kitchen of One Perfect Bite...I was an adult before I had a deviled egg. For whatever reasons, they were never prepared in the kitchens of my childhood. I suspect these may be one of those dishes that has regional, rather than national appeal and I was raised in an area where they were not widely popular. While I enjoyed my first deviled egg, I was never moved to reproduce them in my own kitchen. I sat in on a planning meeting for a picnic this week, and deviled eggs were mentioned as a possible menu item. I feel badly now, because I was the one who squashed the idea of serving them. I have a "thing" about dishes made with mayonnaise being served on occasions where there is no refrigeration, and, in arguing my point of view I was way more vociferous than was necessary. These eggs were my way of apologizing to the woman whose toes I stepped on. She liked them, so I thought those of you who enjoy deviled eggs might want to give them a try. The eggs have a hint of curry and are wonderfully fragrant. I found the recipe in Nancie McDermott's The Curry Book and I can recommend the eggs and the book to you. These eggs will never win a beauty contest, but if you are looking for a new twist on an old favorite, I think you'll like them. It is probably best to use a mild curry powder to prepare them. Here's the recipe.

Deviled Eggs with Curry and Cilantro

Ingredients:

8 large eggs
1/4 cup mayonnaise
1 tablespoon mild curry powder
1/2 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 large scallion, thinly sliced crosswise
2 tablespoons finely chopped cilantro

Directions:
1) Place eggs in a medium-sized saucepan and cover them with water. Bring to a full boil over high heat. Reduce heat to medium and simmer for eight minutes longer. Remove from heat. Drain and rinse in two changes of cold water. Leave eggs in water until cool.
2) While eggs cook, combine mayonnaise, curry powder, mustard, salt and pepper in a mixing bowl. Mix well. Set aside.
3) Peel eggs and cut in half lengthwise. Carefully scoop out yolks and force through a sieve. Add to mayonnaise mixture and mix well. Fold in scallions and cilantro. Stuff each egg with one tablespoon filling. Serve at once, or cover and chill until ready to serve. Yield: 16 deviled eggs.

  5. I grew up in the Midwest. At every gathering we had, someone would bring deviled eggs. I like the blend of flavors in your recipe. I am going to give them a try!

  9. Well, Mary- I have that same "thing". I enjoy deviled eggs and many other mayo based dishes, but only at home type parties where the fridge is right there. These look very good!

  10. I'm not much of changing a classic but this recipe is interesting and I might just have to give it a try. I'm a picky deviled egg eater and NEVER eat someone else's. Would be a great dish to bring to a potluck picnic!

  11. There is so much you can do with deviled eggs and so many flavors to add. Perfect with a touch of curry.

    I find deviled eggs are one of men's favorite appetizers. They say, "Oh, deviled eggs," and then they dig in.

  14. I grew up in the south. Deviled eggs were a part of every event. They sat on picnic tables in the sultry summer days. That, coupled with the fact one needed to use old eggs so they'd peel properly, should have been enough to do us in! Thanks for a new way to serve them. By the way, I have three deviled egg dishes--two were inherited!

    Visions of church suppers!I wanted to share the Cook's Illustrated method of making hard boiled eggs. They recommend you start them cold and as soon as they come up to a boil, cover them and take them off the heat. Let them sit for 10 minutes covered, then transfer them to an ice water bath for 5 minutes. (I know, a big pain)I like curry in egg salad.

  32. Funny story, Mary. I think we all tend to think deviled eggs are trite. The thing is, they aren't. There is a new really hot restaurant in Miami (he just won the James Beard Award for best chef south) and he has a long list of truly unusual appetizer. And guess what's on the list? Deviled eggs. And they sell like hot cakes too. Men love them.
    I really like the curry idea too. Going to add that the next time I make them!

  41. I love deviled eggs too, and don't make them but your recipe is tempting.
    Hard boiled eggs spoil faster than mayo, which has preservatives. Even homemade mayo keeps longer than eggs or tuna-- thanks to the acid. Mine keeps for two weeks or longer. Just thought I would share. Thanks for the visit and comment!

  52. I hate to admit it, but I have never tried a deviled egg. Maybe, it is regional, because now that I am thinking about it I haven't really seen them too often. I think I will have to try them; you have convinced me:)

    I think you made the right choice about the picnic; mayo and hot weather definitely not a good mix. I think it was nice that you made the eggs in honor of the other woman.

  57. I do love deviled eggs! We always kept chickens when I was growing up, so we often had deviled eggs. They were a MUST for church picnics. I've never made them with curry, but it sounds delicious. Thanks for the recipe!

  63. Deviled eggs are a constant here in the south. And, I do like them, but I have had many I don't care for.

    Sometimes I put rough chopped shrimp in mine, and they seem quite a hit.

    One of my Cuban born friends puts a can of deviled ham in hers. They are very different, but tasty.
