Blueberry Cream Scones




From the kitchen of One Perfect Bite...I don't find coffee cake to be much of a temptation, but I get all weak-kneed if there are scones in the house. I simply can't resist them, particularly if they are made with sweet cream. Scones are not an everyday affair in my kitchen. I make them only for the holidays, because, truth be told, I could eat the entire batch if left to my own devices. I first sampled these scones at Central Market in Austin, Texas. It was love at first bite. I was able to get a copy of the recipe and was delighted to find that the scones are as easy to make as they are delicious to taste. While there is a bit of wait time involved, they can be made without special equipment and can be table ready in about 2-1/2 hours. The scones take 10 minutes to mix, 2 hours to chill and about 20 minutes to bake. To simplify breakfast, I usually chill them overnight and bake them just before serving. Austin's Central Market holds a special place in my heart. I love the community in which I live, but no one would ever dub its stores a food lover's paradise. Were it not for small ethnic markets and local farms, shopping in the diaspora would be a ho-hum affair at best. Not so Central Market, and I'm like a kid in a candy store on those occasions when I can shop there. It also holds a bit of my family history. My daughter and I learned to make tamales in a class they taught when she first moved to Austin. I'm still trying to figure out how she became more proficient at their assembly than me. I suspect it's another case of "the queen is dead, long live the queen". For the time being anyway, I still make better scones than she can. Here's my secret recipe. Be forewarned, if you share it with my firstborn I'll have to hurt you.

Blueberry Cream Scones...from the kitchen of One Perfect Bite courtesy of Central Market

Ingredients:
2 cups all-purpose flour
1/4 cup + 2 tablespoons sugar, divided use
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons butter
3/4 cup blueberries
1-1/4 cups heavy cream

Directions:
1) In a large mixing bowl, combine flour, 1/4 cup sugar, baking power, and salt. Cut butter into dry ingredients. Stir in blueberries.
2) Add heavy cream and stir by hand just until dough forms. Dough will be soft and sticky. Cover and refrigerate 2 hours.
3) Preheat oven to 400 degrees F.
4) Turn dough out onto a lightly floured surface and knead gently until dough just holds together. Press dough into a 8 to 9-inch circle, 1-inch thick. Cut into wedges. Place scones on baking sheet and sprinkle scones with reserved sugar.
5) Bake 15-20 minutes at 400 degrees or until scones are a light golden brown on top. Yield: 6 servings.

Her recipe was one of those treasured family 'scribbles' that I haven't been able to successfully duplicate. I can't wait to give these a try. My mouth is watering just looking at the picture!

  16. Oh, Mary. I am still chuckling over the tamale rivalry between you and your daughter! LOL! It is a proud moment when they "outdo" us, which my daughter has in many, many ways (but, we do have to have our secrets! LOL! My lips are sealed about the scones!).

    Scones are hands down my choice over coffecake. And, Central Market is better entertainment than most anything that immediately comes to mind. Our nearest one is in Dallas and I have enjoyed these very scones. They are delectable!

  21. I can't resist scones either. Warm, dripping butter, and accompanied by a big pot of tea.
    For years I've been looking for a recipe that replicates a scone I had near Ottawa long ago. The bakery/restaurant is long gone. It was made with brown sugar and some sort of flour that wasn't whole wheat but some sort of graham-tasting flour.

  22. Don't you just love making these cream scones -- they are so easy!!! I've just done them plain and with herbs but they are definitely a good recipe. Mine doesn't call for the chilling, however so they can be on the table faster!!!! They're even good left over!

  33. I really miss Central Market. I could lose myself for hours in there. Equally fun is Fiesta Mart. When I lived in Houston I couldn't afford to go to the she-shee supermarkets so I'd go to the much cheaper Fiesta. Best produce I've ever seen in my life. I wonder if they have those in Austin...

  43. Mary, blueberry scones are a weakness of mine, I too can eat the all of the ones I make. I like that this recipe only has 3 T. of butter of course the cream is the indulgence here. I have will have to try this version.

  45. I also get weak-kneed when it comes to scones. Scones sold in stores rarely suffice. I just may make these today - and surprise the family. (My mother is often a better cook - but I have my moments).

I am a huge scone fan, especially being raised in Scotland where scones are in abundance, almost hanging from every tree, but since moving to the U.S I have still to find a scone without an acidic type of aftertaste probably from the baking powder. I'm trying these beauties for breakfast this weekend.

  74. Mary- I've never been to Austin, but it always looks like a wonderful place to visit. I have a soft spot for scones too. Like you, I love the ones made with cream and blueberry is a favorite. They are gorgeous!
