Mango Salsa

From the kitchen of One Perfect Bite...Before getting to today's recipe, I wanted to let you know about an article in Gourmet Live that lists the 50 most important women in food. The list is fairly comprehensive and contains some entries and omissions that might surprise you. At the very least, it will give you something to talk about with other foodies and friends. Over the course of the next year, I'm going to try to make one dish created by each of the women on the list. If you'd like to join in the fun, email me and we can formalize a schedule. Otherwise, I'll aim to publish one recipe each Friday starting the second week in June. I hope to hear from you.

The hail was a bit much, but other than that we've had a great day. The fajitas and tacos were both well-received and everyone loved the mango salsa I'm featuring here tonight. This simple condiment is a feature of Mexican, Asian and Indian cuisine. This version has a decidedly Mexican bent and, like yesterday's pico de gallo, a recipe is needed only to list the ingredients required to make it. Once they are assembled the dish becomes a chop, combine and chill affair that can be tailored to your liking. I do hope you will give it a try. Here's the recipe.

Mango Salsa...from the kitchen of One Perfect Bite

Ingredients:
1-1/2 cups diced mango
3 tablespoons finely chopped jalapeno pepper
3 tablespoons finely chopped red onion
2 tablespoons fresh chopped cilantro
1 tablespoon lime juice

Directions:

Combine all ingredients in a storage container. Cover and chill for up to 3 days. Yield 2 cups.

  5. I love salsa like these, it is common in Philippines but we use the semi ripe mangoes so theres a hint of sourness and sweetness to it. We do pair it with grilled meats and they are a perfect pair!

  21. For some reason I'm unable to view your v
photograph, which is a shame as I always enjoy your excellent photography. Mango Salsa is delicious - I don't make it often as mango's aren't always easy to come by, but I have made it a few times. Fresh mango chutney too which is also good.

  33. I love mango salsa. I first experienced it while I was a white water rafting guide in Northern California. A loca B&B gave us a recipe. As everyone has indicated it sounds like the perfect addition to a Memorial Day BBQ (even though it is hailing 2 inches, in the Tehachapi Mtns)

  45. I love the idea of the spice from the jalapeno mixed with the sweetness from the mango. It sounds really balanced.

  46. The mango truly is the star of this salsa - with enough spice to be sweet with a bite. It goes with all - and when the meal is done, the family laps up whatever salsa is left. I love what you are doing and am interested but have never been able to keep to a blogging schedule. I always mean to... but the freelancing changes every month. And I must look up the women in food. Yay to celebrating women in food!

  51. Curious list from Gourmet Live...I'm not sure I agree and I positively think there are a few inclusions and omissions that need reconsideration.

Kudos to you Mary for taking on the list. It should be quite interesting, and tasty too!!!

You have finally convinced me to reconsider the Mango. Your salsa is worthy of a try, it sure looks "purty."

    Thanks for sharing Mary...
