Pumpkin Yeast Rolls - Blue Monday



From the kitchen of One Perfect Bite...While it may sound strange to those whose families live in close proximity to one another, we are spread over the globe and celebrate Thanksgiving whenever we can all get together to celebrate the feast. The Eastern contingent of the family, which includes our younger grandsons, will be joining our very full house on Tuesday. That will be the night we celebrate our family Thanksgiving. These lovely rolls, for now safely ensconced in the freezer, will be one of the things that we serve. The recipe belonged to my husband's mother who was raised in Southern Illinois. They were part of her childhood and fairly typical of the farm breads that were served in that region at the time. They were served at bridge luncheons, probably because the original recipe made dainty rolls that were only 1-inch in diameter. The smaller size doesn't work for my trenchermen, so I double the size of our rolls. This dough, by the way, would make a wonderful cinnamon bread. The pumpkin keeps the rolls moist and there is just a hint of cinnamon to confound the tongue. I use canned pumpkin puree to make these because it's easier to use than fresh puree which can be stringy. I make these rolls for sentimental reasons. Some of you might enjoy them for their novelty. Here's the recipe.

Pumpkin Yeast Rolls...from the kitchen of One Perfect Bite

Ingredients:

1-1/2 teaspoons active dry yeast
1 teaspoon granulated sugar
1/4 cup lukewarm water
3 cups all-purpose flour
3-1/2 tablespoons unsalted butter
2 tablespoons light brown sugar
1/4 teaspoon salt
1 cup pureed pumpkin
1 egg, lightly beaten
1/4 cup maple syrup
1/4 teaspoon ground cinnamon
1 cup whole wheat flour

Directions:

1) Combine yeast, sugar and water in a large bowl. Let sit until foamy, about 5 minutes. Stir in 1/2 cup all-purpose flour. Cover and let risein a warm spot until double, about 1 hour
2) Melt 2 tablespoons butter and pour into a medium bowl. Add brown sugar, salt, pumpkin, egg, maple syrup and cinnamon. Add to yeast mixture and beat until smooth. Add whole wheat flour and 2-1/4 cups all-purpose flour to make a stiff dough.. Knead in pan. Cover and let rise in warm place until double in size, about 2 hours.
3) Punch dough down and turn onto a floured board. Knead briefly and roll to a sheet about 1/2-inch thick. Cut into 2-inch circles and place circles on a floured baking sheet. Cover loosely with a towel and let rise again for 1 hour.
4) Preheat oven to 425 degrees F. Melt reserved 1-1/2 tablespoons butter and brush on top of rolls. Bake for 15 to 20 minutes. Yield: 1 dozen 2-inch rolls.

  3. I always keep canned pumpkin to make pumpkin choc. chips muffins, but this recipe intrigues me...just enough sweetness, but not icky sweet. Thanksgiving is our favorite holiday. Hope you have lots to be thankful for as you gather this week.

  7. These rolls are beautiful!! Any time the whole family can come together from various scattered parts is cause for thanksgiving and celebration!! One thing I do know they will be thankful for is eating like royalty when they are at your house.

    These rolls do look good but I must admit that I've never heard of yeast rolls with pumpkin! But they do look yummy!

  22. Cant say I have seen pureed pumpkin here but I think pumpkin soup undiluted would do much the same. Love the whole concept of the maple syrup and spice added as well.

    Because its cold here we celebrate Christmas in July for a traditional roast dinner and plum pudding along the lines of the english ancestors most of us have.

  55. Hello Mary, you probably thought I have forgotten you but not so, I have had a crazy busy summer and visiting my blogging friends would have been a lot easier. HA! Nope, lots of company, vacations, and my daughter needing me for three weeks because of rotator cuff surgery. Whew, now I am finally home and there is nothing on my calendar until October. A breather at last. I am truly enjoying the first Monday in a while to just visit as long as I wish. This is a happy day for me.

    Pumpkin yeast rolls is something I have not thought of ever. However, I am anxious to try them. I make bread so this is not a difficult task. I love your happy family gathering story. This summer we had MANY happy family gatherings. Thus, no computer time to speak of.

    I will wait until the next family meal and that is a common happening in this home. Smile.

    I hope you had a wonderful summer. Fall is right around the corner and I for one welcome the most favorite time of the year for me.

  60. Well, I just had to tell you that we can not get canned pumpkin in my town! I even called Libby about it. They said they had had a poor harvest last year! I had had one can left--deeply buried and I was able to make my pumpkin buckwheat biscuits (they are gluten free). This year I will be sure to do much more stocking up!! Our stores have been out of the pumpkin since about the time winter hit!!

  82. Happy Thanksgiving! I roasted, peeled and pureed a pumpkin just once! The result was a pie that was good, but one where I couldn't tell the difference between canned pumpkin and the one that took me all day to fix. Only canned pumpkin for me, now :)

  88. I made these yesterday , we liked them, not too sweet, but just nice.
    As we cannot buy canned pumpkin here in the Netherlands, i used my own frozen puree.
    Baking bread with AP-flour was quite new to me, but it went well.
