From the kitchen of One Perfect Bite...I'm not a gambler, and have very low expectations when it comes to winning contests or giveaways. For years I'd enter and have nothing to show for my efforts, but it seems my luck has changed. Last week I received a package containing the Real Food Diet Cookbook by Dr. Josh Axe, some Equal Exchange Fair Traded coffee and vegan Snapdragon cookies made by Liz Lovely. The gifts were part of a giveaway sponsored by The Foodie Blogroll which is administered by Jenn Campus, its creator. I was thrilled with my windfall. I hope that all of you will take a look at the contests and giveaways that can always be found here. The Foodie Blogroll is also a great place to network and meet fellow bloggers. You won't regret your visit.
Dr.Ash is a wellness physician and radio show host. The real food diet he supports is not a fad or quick weight loss plan. His interest is in real, unprocessed food that will improve overall health. He is a proponent of counting nutrients rather than calories, fats or carbohydrates. His focus is on recipes that use unprocessed food and the book contains a wealth of information for those seeking a better diet and healthier lifestyle.
My regular readers know that my husband is a committed carnivore. He views meatless meals the same way a vampire views holy water or a cross. While this is not a strictly vegetarian cookbook, I wanted to try at least one of the meatless entrees for this post. My theory being, if the Silver Fox would eat it, it had to be good. I decided to go with the recipe for bean burgers. You'll probably have to shop for some of the ingredients needed to make these. Most kitchens don't have coconut oil or gluten free breadcrumbs lying around, but it is important to remember that these are recipes designed for a new way of eating, and that requires an openness to new ingredients. The burgers are very easy to assemble and they are quite good. Next time I make them I'll use less lime juice, but I was generally happy with the recipe. Oh, and yes, the Silver Fox ate his. He slathered it mayonnaise and buried it in a bun, but he ate it without complaint. If you are a proponent of "real" food, you'll like this book a lot. Here's the recipe for the bean burgers.
Bean Burgers...from the kitchen of One Perfect Bite courtesy of Dr. Josh Ash and the Real Foods Diet Cookbook
Ingredients:
2 cups cooked garbonzo beans, rinsed and drained if canned
1-1/2 pounds sweet onions, thinly sliced
2 tablespoons coconut oil, divided use
1/2 cup gluten free breadcrumbs
6 cloves garlic, minced
2 tablespoons fresh cilantro, minced
1 tablespoon fresh rosemary, minced
2 tablespoons tahini
2 tablespoons lime juice
1 teaspoon kosher or sea salt
Black pepper to taste
Directions:
1) Heat 1 tablespoon coconut oil in a large pan and saute onions until they are soft and begin to caramelize. Season with sea salt and pepper to taste. Place caramelized onions in a large mixing bowl and set aside.
2) Place garbanzo beans in a blender or food processor and mix until smooth. Add bean mixture to bowl containing onions.
3) Add all remaining ingredients and combine thoroughly. Form into patties. (I used a third cup measure to make 6 patties.)
4) Heat remaining coconut oil in pan and cook burgers until done, flipping once. (I cooked mine over medium heat, 5 minutes per side.) Serve with avocado slices and sprouts. Yield; 6 servings.

Mary - Congratulations on your prizes. It's always such a treat to receive cookbooks and food in the mail (much better than bills). I love a good bean burger and suspect that my husband (also a carnivore) would love these as well.
ReplyDeleteI would also love to add coconut oil to my pantry. I've never cooked or baked with it before, but would love to give it a try.
Enjoy your gifts!
This looks amazing!!! I have been looking for a good bean burger recipe =) perfect! I bookmarked it -- thanks!

Hi Marie
ReplyDeleteI always add beans to my fish cakes, it makes them unbelievably crunchy and crumbly, but I will for sure try to leave the fish out next time!!
My husband is a huge meat eater as well, I've been trying to find an alternative to fool him lol this sounds really good I'll have to give it a try! Congrats on the win : )
ReplyDeleteI LOVE beans and try to eat them often!
ReplyDeleteThat said, I am always looking for new ways to enjoy beans so thank you for sharing this book and this recipe from its pages!
Congrats on the win!
Congradulations, Mary! I am happy for you! I have seen this man's book in the stores! I will say that this is the prettiest looking bean burger I've seen.
ReplyDeleteThis might be the perfect recipe for Jan 2nd....when I start my healthy eating and diet...lol!
ReplyDeleteI love bean burgers but have yet to make some that stay together well. I tend to make them into little appetizers in order for them not to crumble. I might just make these, I have a ton of chickpeas in the cupboard! Thanks!
ReplyDeleteI like bean burgers and will try this recipe, it sounds great, thanks for passing it along:)
ReplyDeleteMary, the combination of ingredients sounds delicious. Although we too are carnivores, fish and chicken included, we do love our beans of all kinds. PS: great win.
ReplyDeleteI was brought up vegetarian - and still find vegie burgers MUCH tastier than plain old hamburgers! So this is a welcome return to childhood treats - so appropriate at Xmastime!!
ReplyDeleteMerry Xmas!
Looks delicious and healthy too. Congrats on your windfall :) I would love to have that book :p
ReplyDeleteThank you for sharing the recipe from the book :)
Merry Christmas to you and your family,

ReplyDeleteWoohoo! Congrats on your win! I love a good bean burger and am always looking for new recipes. These sound RIFE with flavor!
ReplyDeleteThat's funny, I was reading the recipe and thinking hubby won't eat this without meat! Maybe he could if yours could!
ReplyDeleteThis particular recipe got my attention Mary. In the last few years I've done my very best to reduce the amount of meat Hubby always wanted. With some creativity in my cooking, I've slowly managed to wean him closer to a vegetarian based diet. I've somewhat succeeded. I do still enjoy a few meat-based dishes once and a while also.
ReplyDeleteI really appreciate you sharing this recipe since some of these ingredients will be a welcomed addition to my patties ;o) I also now bake patties with good success.
Have a wonderful weekend,
Claudia
Same thing with my man, when there is no meat in a meal, it's no a real meal... Anyway, I love vegan burgers, I made lot's of them! This one looks good to, IM gonna try it soon!
ReplyDeleteThe Booze Hound eats vegetarian meals willingly, unless they involve tofu :) I've been trying to find the perfect bean burger recipe because I just really like beans! I'm trying a new one tonight and will let you know how it comes out!

ReplyDeleteI have a feeling we'll all reap the rewards of your prizes!
ReplyDeleteThe bean burgers sound good to me. They certainly look quite tasty. I think I might have to slather mine in mayonnaise as well which would, of course, necessitate a bun.

ReplyDeleteI wish I had one right now! They look wonderful!
ReplyDeleteI am married to a carnivore too.
Last week when I was feeling too bad to cook, I served him some of the vegetable soup I had been surviving on. He crumbled so many crackers on top of it, and I asked why? He said, "I'm hiding the green stuff I see it" lol
with all of those amazing flavors and spices, i believe it was wonderful! they look so good too, i love vegetarian burgers!
ReplyDeleteI love bean burgers and thankfully my husband will eat them without complaint. That's not to say that the moment their is a tray of meat on the table that he doesnt go hog wild (so to speak).
