Butterscotch and Walnut Brownies



From the kitchen of One Perfect Bite...The good news is these brownies are delicious. They're patterned after those served at Clementine in Los Angeles and they are really, really good. The Los Angeles Times first published the recipe, and while it was picked up by the wires and published by other news organizations, I haven't been able to find a review of the recipe that was written by a home cook or a blogger. Normally, I wouldn't care, but I was looking for validation. The fudge-like brownies I made look nothing like the cake-type brownies that appeared in the paper. Here's hoping I got it right.

This is one of the easiest recipes I've come across. It requires no special equipment, and, if you have 2 mixing bowls and a wooden spoon, you'll be able to whip these bars up in a matter of minutes. I'm sure you have the ingredients needed to make them in your pantry. I made no changes to the original recipe, although I did find it necessary to bake them five minutes longer than was recommended. I plan to make these again, though next time around I intend to put away my cups and spoons and measure ingredients by weight. I normally don't fuss with a recipe this way, but the brownies are so good I want to make sure I do them justice. I'll let you know what happens. I hope you'll try these. Here's the recipe .

Addendum: The brownies were made again, this time using a scale to weigh the the ingredients. No signicant changes were noted and the finished brownie was fudgy rather than cake-like.

Ingredients:
3/4 cup + 2 tablespoons (3.5 ounces) flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 cup + 2 tablespoons (9.25 ounces) dark brown sugar
5 tablespoons butter, melted
1 extra-large egg
1/2 + 1/8 teaspoon vanilla extract
1/2 cup + 2 tablespoons coarsely chopped toasted walnuts

Directions:

1) Heat oven to 325 degrees. Grease an 8-inch square pan. Set aside.
2) In a medium bowl, sift together flour, baking powder and salt and set aside.
3) In a large bowl, stir brown sugar into melted butter. Stir in egg, then vanilla.
4) Stir in dry ingredients, then fold in nuts.
5) Place the batter into prepared pan and bake until set (a toothpick inserted will have moist crumbs), 25 to 30 minutes.
6) Remove from heat and cool slightly before serving. Yield: 12 to 16 servings.

  43. I've had the brownies at Clementine and they are delicious! I was so excited when the LA Times featured them. Looks like you've made them right, or pretty close to right. They are supposed to be moist and chewy, not cake like, although I agree the LA Times pic was a bit misleading. These are yummy addictive brownies!

    I made the Clementine butterscotch brownie recipe a few weeks ago (you can read about it here), and I measured everything by weight -- I did get brownies that were more similar to those pictured in the L.A. Times article. But your brownie looks decadently delicious!

  73. These look excellent. I often go by weight and have greater success. I found I was packing my brown sugar too much. I was over an ounce off on a cup. That changed my blondies--success at last.

  78. Natalie, I'll have to answer here because I have no other link to you. I used an 8-inch pan. I made no other changes to the recipe but the photo was taken at very close range and then cropped in photoshop which makes them look thicker than they actually are. Mine were the same thickness as a standard fudge type brownie. I'm making them again this weekend and I can actually measure them for you then. I hope this helps. Blessings...Mary

  80. Hi, Mary. I made these last night, but I made a mistake and 'read' 350 instead of 325 and baked them for 25 mins on 350, so they were firm and more of a cakelike brownie. My family really liked them because they thought them not very sweet. I thought they were good, but I was looking for more of the fudgey brownie like yours, so I am going to make them again soon.   84. I work two blocks from Clementine, near Century City in West Los Angeles, and these are one of my favorite things in the world. I also found the recipe in the lA Times Culinary SOS column, and i baked them this past weekend. I thought i should give you some feedback, since yours don't look right. The recipe posted by the L.A. Times GROSSLY underestimates the bakig time. The final product should not be runny or saucy, as yours appear to be (your look UNCOOKED in the middle). The batter rises, and then it FLATTENS. The final product is almost exactly the same as a good, homemade brownie, which is why Cementine calls them "butterscotch brownies". The corners and edges are CRUNCH and the middle is CHEWY. I baked mine at a lower temp (about 312-315 degrees) for about 45 minutes. I inserted a skewer in the middle, and it came out CLEAN. That is how I knew they were done. The only reason I can gice you this feedback is that I am familiar with the genuine produst. I hope you will give this recipe another try
