Peanut Butter and Milk Chocolate Chippers
From the kitchen of One Perfect Bite...My poor children were born to a mother who was under the influence of Adelle Davis and Gayelord Hauser. I know these names are unfamiliar to many of you, but back in the day, these two nutritionists were commanding personalities in the food and diet industries. They adhered strictly to FDA dietary guidelines and didn't believe a morsel should reach the alimentary canal if it wasn't good for you or contribute, in some fashion, to vibrant good health. They were more concerned with nourishment of the body than the soul, and that put a serious crimp in to the diets of many food and dessert lovers. A lot of folks considered them to be the first " food Nazis" and simply tuned them out. I mention them, only because I was so under their influence, that my children were in university before they knew cookies could be made with anything other than peanut butter or oatmeal. There were excesses in my kitchen to be sure, but cookies and snack foods were not among them. The only upside to that, is the cookies that I did make had to be really good. Today's recipe comes from that period of my life. The cookies have a faint taste of peanut butter but most of their flavor comes from the addition of chocolate chips to the cookie dough. They were originally made made with semi-sweet chocolate chips because nothing else was available. These days, I like to use milk chocolate or a combination of peanut butter and milk chocolate chips when I whip them up. They make a perfect lunchbox cookie and I suspect your family will love these crisp treats. I know you'll like them because they are so easy to make. Here's the recipe.
Peanut Butter and Milk Chocolate Chippers...from the kitchen of One Perfect Bite
Ingredients:
Ingredients
6 tablespoons butter, softened
1/4 cup creamy (smooth) peanut butter
1/3 cup sugar
1/3 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk chocolate chips
Directions:
1) Preheat oven to 350 degrees F.
1) Cream butter, peanut butter and sugars in a small bowl until light and fluffy. Beat in egg and vanilla.
2) Combine flour, baking soda and salt in a separate bowl and gradually add to creamed mixture. Mix well. Stir in chocolate chips.
3) Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake for 11-14 minutes or until golden brown. Remove to wire racks. Yield: 3-1/2 dozen.

ReplyDeleteI hear your story. I grew up with Adelle Davis's philosophy. Mostly my teenage years. She, along with my PA Dutch heritage have made for a nice combo now that I live in the Pacific NW. I'm privledged.

ReplyDeleteHaha! My mother must have secretly been reading from the same books ... although it has left me with an abiding love for biscuits (as cookies are known downunder in OZ) with healthy ingredients like oats, bran, cornflakes, dates, raisins and the like. Sadly, all too rare these days!!

ReplyDeleteI think this elevates chocolate chip cookies to a new level. I've never done them with milk chocolate but (and don't let this get out), I prefer milk chocolate to dark chocolate. Have a delicious day!

I grew up no homemade cookies at all, so even healthy ones would have been welcome. Your cookies look amazing, and your photo is wonderful. I might have to borrow that idea the next time I photograph a batch. I'm pinning this post - hope to try the cookies soon.

I've only recently heard of Adelle Davis, but she had some pretty radical ideas for the time. These cookies look scrumptious!
ReplyDeleteI keep forgetting to put on a bib before I visit your site :). That top image is gorgeous. I don't make many crispy cookies, but I always mean to. And because I'm a wee bit obsessed, I might adjust the pb to butter ratio just a tad :). And as far as food Nazi-ism goes, everyone is being made to fear everything these days. You can't eat this, you shouldn't eat that. It's aggravating. Don't eat too much of any one thing, and you'll be fine. Everything in moderation, all things with balance.
ReplyDeleteOh my gosh, Adele Davis is a blast from the past---I had "Let's Cook it Right"! I don't have that book anymore, but I'm sure much of my 'instinctive' cooking sense comes from her. Your cookies look perfect.
ReplyDeleteWe have Gayelord Hauser food here in France--I've sampled some and it's not bad for a snack! I'd rather have these cookies though... peanut butter and milk chocolate is a great pairing!

ReplyDeleteOh Mary, I'm still chuckling. Little did I know that my kids were taking their "healthy" snacks to school only to trade them off. (I used carob in my chocolate chips:) I still have Adelle Davis and Hauser in my library right along my old time favorite; Silent Spring...

ReplyDeleteDo you remember Dr Lendon Smith--he worte a book called 'Feed Your Kids Right'. That was my bible till I got tired of making yogurt and my own wheat crackers. Six kids was a full time job, I had to relax a bit on the food issue. I still cooked everything, I just enjoyed it a bit more.
ReplyDeleteThis is a cookie we would have made often. I homeschooled two of my boys for a couple of years. Cooking was an enjoyable part of our curriculum.
