Avocado Pudding with Chocolate and Coconut
From the kitchen of One Perfect Bite...This simple silky pudding is a great way for those with a sweet tooth to end a meal. The pudding comes together in minutes and it has enormous appeal for those who crave chocolate desserts. The avocados add a rich silkiness to the pudding that's usually not found in simple desserts, while the coconut milk adds a layer of flavor more typical of something you might be served in the tropics. Variations of this recipe are common on the internet, so it is very difficult to trace the recipe to its original developer. While I have substantially changed its form, I must credit The Taste Space for the inspiration that led to my version of the recipe. I also have to thank the folks at SoCal Avocados for the generous gift that made this past week of testing and experimentation possible. You can find their website, here. As you glance through the ingredient list, you'll see many spots where it would be possible to make substitutions of your own choosing. I liked this recipe and I think you will, too. Here's how the pudding is made.
Avocado Pudding with Chocolate and Coconut...from the kitchen of One Perfect Bite
Ingredients:
2 ripe avocado (about 2 cups mashed)
3 tablespoons honey, or to taste
1/2 cup + 2 tablespoons cocoa powder, sifted
1/4 to 1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
Pinch of cardamom
1 teaspoon lemon juice
1 cup unsweetened coconut milk
Directions:
Blend all ingredients, except coconut milk, in a food processor or blender until smooth. With blender running, drizzle in coconut milk, and pulse until absorbed. Spoon pudding into dessert cups. Chill. Yield: 4 to 5 servings.

ReplyDeleteHow come I do not see traces of avocado? Shouldnt be the chocolate be mixed with some green or violet-ish color?
ReplyDeleteAt first I was thinking I wouldn't like this, because I hate the texture of coconut, but as I see it just uses coconut milk it sounds more appealing. I love chocolate and avocados, but had never thought of putting them together. Maybe this would be a way to get my grandson to eat the avocados. He hates anything green :)

ReplyDeleteFoxy Reign, I was unable to comment on your blog, so I'll respond here. The avocados are pureed, so you shouldn't expect to see flecks of them in the pudding. I'm not sure how to respond to your question regarding food coloring. I don't use a lot of food coloring in any of my recipes and it would take far more than I consider to be healthy to add color to the cocoa and avocado base. Why don't you try it and let us know. Wow! I love the combination of this pudding's ingredients. I'd never thought of mixing avocado with chocolate and coconut milk. This is extremely interesting and something I will try when I get some avocados :D
ReplyDeleteAvocado pudding was one of those surprises for me. I loved it when I tried it, though your recipe looks more sophisticated and equally delicious. After a couple servings I tried folding whipped cream into it for a mousse and it was fantastic as well.

PS. As I was just writing this recipe down, I realized that I can make this for my daughter if I use carob powder. She has so many food allergies, making desserts is really hard. Thanks, Mary.

I've come across several recipes using avocado in desserts, but have yet to try one myself. Yours looks really nice and creamy!

My husband's cousin gave me a recipe for this in the summer and I never got around to making it. Hmmm, I like the addition of coconut milk. Think I need to put your version on my short list.

Sounds delicious! It's not ingredients one would think to put together but when you think about it...it makes sense.
ReplyDeleteMy girlfriend had a raw food party and this pudding was made. She used maple syrup for sweetness and soy milk instead of coconut. It was surprisingly good because I don't like avocados!I couldn't believe the texture was perfect!

ReplyDeleteI've never made chocolate mousse before because they're usually high in calories due to the large amount of heavy cream and egg yolk. substituting those ingredients with avocado is such a good idea! i'm gonna have to give this recipe a try very soon! thank you for sharing!
