Frugal Foodie Friday - Remains of the Day - Turkey Fried Rice


From the kitchen of One Perfect Bite...This very inexpensive meal makes good use of those last bits of meat that cling to a turkey carcass. It has the added advantage of being quick and easy to prepare, and while it is very basic, it makes a very satisfying meal. There are no tricks to preparing a good fried rice, but it is important to have all of the ingredients measured and ready to go before you begin to heat your wok or frying pan. Chinese-type dishes are can be disappointing if the vegetables used in them are cooked past the crisp-tender stage and it is very easy to do that if you have to step away from the pan to chop or fetch an ingredient. I do hope you'll give this super simple frugal Friday recipe a try. Here is how turkey fried rice is made.

Turkey Fried Rice...from the Kitchen of One Perfect Bite

Ingredients:

2 tablespoons vegetable oil
1 onion, chopped
3 cloves garlic, minced
3 cups cold cooked rice
1 cup shredded carrots
2 cups chopped cooked turkey or chicken
1 cup frozen baby peas, thawed under hot running waterif you take your eyes off the pan.
2 eggs, beaten
2 tablespoons soy sauce
3 tablespoons oyster sauce
1/4 teaspoon sesame oil
1/8 teaspoon pepper

Directions:
1) In large wok or skillet, heat oil over medium-high heat. Add onion and stir-fry 3 minutes. Add garlic and stir-fry until fragrant, about 1 minute longer. Then add rice; stir-fry 4-5 minutes until hot.
2) Add carrots, turkey, and baby peas and stir-fry 4-5 minutes. Push ingredients to sides of wok or skillet and add beaten eggs. Cook eggs until set, then stir into remaining ingredients.
3) Add soy sauce, oyster sauce, and stir-fry 3 minutes. Stir in sesame oil and pepper and serve immediately.
Yield: 4 servings.

  1. I love fried rice, but rarely make it at home.. not sure why that is. Guess this is a great reminder to make it more often ... and never thought to try it with leftover turkey!!

  3. Mary, We use a fair amount of rice...part of at least one meal a week. We've never made fried rice and this is a great way to use up any leftover turkey! Take Care, Big Daddy Dave

  4. the turkey soup with dumplings sounds wonderful as does this rrice, I have never added hoisin sauce to our rice but I see many do, I must ttry it,
