From the kitchen of One Perfect Bite...This is a Taiwanese dish that gets its name from the ratio of the three main ingredients used to make it. The chicken is always made with equal portions of soy sauce, rice wine and sesame oil. This version of the recipe is fast and easy to prepare and while it lacks the burnished glaze that make so many Asian dishes beautiful, its taste more than makes up for its plain Jane appearance. I made rice and steamed snow peas to go along with it and it made for a nice supper. The recipe for the chicken can be found here.
On another note, Mary continues to improve, but her activity is still restricted. She can't bend, lift or push and she wears a protective shield when we are out. The doctor has found no additional tears and it looks like the retina has reattached, but there is still a large gas bubble in her eye that clouds her version. It will be several weeks, possibly months, before we know how much of her vision has been restored. She sends you all her best and will be back here as soon as she has been given the all clear.
