From the kitchen of One Perfect Bite...One of the things I've rapidly learned to do is to pick recipes that are scaled to feed small families. Mary and I had leftovers last night, and while neither of us particularly enjoy them, we like to get rid of them before they form a cabal and plot to take over the kitchen. While Mary leaves the cooking to me these days, she put together a list of easy recipes, so I have a map to work from and can pick what I want to make for dinner. I had a taste for pizza tonight, so I decided to make a Mexicali version that uses flour tortillas in place of bread dough. This is one of our favorite lunch dishes, and we make it often when family is visiting. It's a great dish to keep in mind when you are feeding teenage boys with hollow legs. If you are looking for a different kind of pizza, do give this one a try. The "pies" are decidedly Southwestern and I guarantee you'll have to look hard to find anything that is easier to make. Good job Bob. I am sure Mary appreciated you taking over the kitchen while she recovers :-)
Now that is a pizza that even I could manage. I love pizza but have a bit of a hard time making them - it's all about the crust and I am not good with yeast. I am sure I can find tortillas though!
