From the kitchen of One Perfect Bite...I know beauty is in the eye of the beholder, so I'm never surprised when my opinions of fruit that is sold in supermarkets differ from those of others. While I find that the berries and melons available in grocery stores at this time of year are beautiful to look at, they are close to flavorless, and I actually prefer to substitute frozen fruit in those recipes that call for fresh berries. Unfortunately, I can also be infirm of purpose and when I see those luscious red strawberries, I capitulate and end up with strawberries that are over firm and need a flavor boost to bring out their natural sweetness. This simple recipe is a great way to rescue supermarket strawberries, and I think those of you who doctor your berries in this way will be happy with the results. Here is the recipe.
Spiced Strawberries...from the kitchen of One Perfect Bite courtesy of The Blue Goose Inn Bed and Breakfast
Ingredients:
2 cups thinly sliced strawberries
2 tablespoons brown sugar
1-1/2 teaspoon balsamic vinegar
1/8 teaspoon fresh ground black pepper
2 to 4 tablespoons plain yogurt
Directions:
1) Combine brown sugar, vinegar and pepper in a bowl.
2) Add strawberries and lightly toss to coat. Allow to sit at room temperature for at least 30 minutes to macerate. Serve in individual bowls topped with a spoonful of yogurt. Yield: 4 breakfast-size servings.

ReplyDeleteI completely agree with you. Up here in British Columbia we have about a 2 week window in which to buy strawberries from the farm stands the hopefully had a little bit of taste. The grocery store one are pretty much guaranteed to be disappointing. They always require a bit of maceration with something good!
