Strawberry and Chocolate Chip Muffins


From the kitchen of One Perfect Bite...These simple muffins will make a wonderful addition to your breakfast or brunch table. They can be made without special equipment and if you have a large bowl and a wooden spoon you can serve your family fresh strawberry muffins within 30 minutes. Early strawberries are already available in supermarkets, but they lack the flavor of those that are harvested in June. These muffins are a perfect way to use early berries. The chocolate chips are a nice, but not necessary addition. I think you are going to love the muffins. Here is how they are made.

Ingredients:
3/4 cup milk
1/3 cup butter, melted
1 egg
2 cups all-purpose flour
2/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped fresh strawberries
1/2 cup sliced almonds (optional)
1/2 cup semi-sweet chocolate chips (optional)

Directions:
1) Heat oven to 400 degrees F. Grease muffin pan or line with paper baking cups.
2) Beat milk, butter and egg in large bowl. Stir in flour, sugar, baking powder and salt just until mixed.
3) Fold in strawberries and chocolate chips, being careful not to over-mix. Spoon batter into pan and sprinkle with sugar and sliced almonds if desired.
4) Bake for 18-20 minutes or until golden brown. Remove from pan and cool on wire rack. Yield: 12 muffins.

  3. Mary, that is an absolutely "Perfect" looking muffin. I may just have to go use the strawberries I have in the fridge for yogurt & granola parfaits & make these muffins right now.
