From the kitchen of One Perfect Bite...I'm feeding the freezer this week. I have some "events" coming up towards the end of the month, and I'll be so busy baking for them, that I want to make sure that I've stored some treats the Silver Fox can enjoy while I am otherwise engaged and his stomach starts to growl. These simple, moist and healthy muffins are a favorite of his, so I've made a batch to store in the freezer for reheating when his sweet tooth starts to ache. The yogurt and applesauce make the muffins moist and tender and the spices give them wonderful flavor. This is a very easy recipe to prepare and I know you'll enjoy these spice-kissed muffins. Here is how they are made.
Spiced Yogurt Muffins...from the kitchen of One Perfect Bite courtesy of Food and Wine magazine
Ingredients:
2 cups all-purpose flour
1 cup light brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
3/4 teaspoon freshly grated nutmeg
2 large eggs, at room temperature
1-1/4 cups plain low-fat yogurt
4 tablespoons unsalted butter, melted
1/4 cup unsweetened applesauce
1 teaspoon pure vanilla extract
1 tablespoon granulated sugar
Directions:
1) Preheat oven to 375 degrees F. Line 18 muffin cups with paper or foil liners. Lightly spray liners with vegetable oil spray.
2) Combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, allspice, cloves and 1/2 teaspoon of the nutmeg in bowl of a food processor and pulse to blend. Transfer to a large bowl.
3) Whisk eggs, yogurt, butter, applesauce and vanilla together in another bowl. Fold yogurt mixture into dry ingredients until just blended.
4) Spoon batter into prepared muffin cups. Sprinkle granulated sugar and remaining 1/4 teaspoon nutmeg over muffins. Bake for 18 minutes, until muffins are springy. Let cool in pans for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature. Yield: 18 muffins.
