Butterscotch and Walnut Brownies
From the kitchen of One Perfect Bite...The good news is these brownies are delicious. They're patterned after those served at Clementine in Los Angeles and they are really, really good. The Los Angeles Times first published the recipe, and while it was picked up by the wires and published by other news organizations, I haven't been able to find a review of the recipe that was written by a home cook or a blogger. Normally, I wouldn't care, but I was looking for validation. The fudge-like brownies I made look nothing like the cake-type brownies that appeared in the paper. Here's hoping I got it right.
This is one of the easiest recipes I've come across. It requires no special equipment, and, if you have 2 mixing bowls and a wooden spoon, you'll be able to whip these bars up in a matter of minutes. I'm sure you have the ingredients needed to make them in your pantry. I made no changes to the original recipe, although I did find it necessary to bake them five minutes longer than was recommended. I plan to make these again, though next time around I intend to put away my cups and spoons and measure ingredients by weight. I normally don't fuss with a recipe this way, but the brownies are so good I want to make sure I do them justice. I'll let you know what happens. I hope you'll try these. Here's the recipe .
Addendum: The brownies were made again, this time using a scale to weigh the the ingredients. No signicant changes were noted and the finished brownie was fudgy rather than cake-like.
Butterscotch and Walnut Brownies...from the kitchen of One Perfect Bite courtesy of the Los Angeles Times
Ingredients:
3/4 cup + 2 tablespoons (3.5 ounces) flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 cup + 2 tablespoons (9.25 ounces) dark brown sugar
5 tablespoons butter, melted
1 extra-large egg
1/2 + 1/8 teaspoon vanilla extract
1/2 cup + 2 tablespoons coarsely chopped toasted walnuts
Directions:
1) Heat oven to 325 degrees. Grease an 8-inch square pan. Set aside.
2) In a medium bowl, sift together flour, baking powder and salt and set aside.
3) In a large bowl, stir brown sugar into melted butter. Stir in egg, then vanilla.
4) Stir in dry ingredients, then fold in nuts.
5) Place the batter into prepared pan and bake until set (a toothpick inserted will have moist crumbs), 25 to 30 minutes.
6) Remove from heat and cool slightly before serving. Yield: 12 to 16 servings.

Looks so moist and delicious! So the butterscotch comes from the brown sugar huh! I must try this!

This is not the first of your posts I've read, and you never cease to amaze me. Thank you, and I look forward to reading more.
I just love how easy these are to make and such a nice change too!
Mmmm! It seems perfect for a rainy afternoon with a cup of coffee!
Thanks for sharing.
Love from Spain
I enjoy keeping a few recipes around, like this, that have common ingredients that I usually have on hand. So great when I find myself suddenly in need of a dessert. Without a special trip to the store . . . butterscotch and walnut brownies. YUM. Thanks, Mary.
Fondly,
Glenda
Que aspecto maravilhoso. Deliciosos mesmo.

All that deliciousness and served on one of my favorite china patterns!I will have to make these.

So what's the BAD news?
Have a great day!!
Oh! They look so delicious! What a great photo! They sounds so easy to make I can't wait to try them!
Are you thinking they might turn out more cake-like if you measure by weight, Mary? I kind of like the looks of yours, actually. I love that fudgey look in a brownie. The gooier the better!
Super irresistible brownies, looks so moist and luscious! By looking at the picture, I know how tasty this would be :)
Oh how I love butterscotch and it isn't seen that often, these look wonderful.
I love the word "butterscotch." Means "burnt butter," yeah? Or scorched? So that's my new word. Peppers roasted on the grill are now pepperscotch.
These look so gooey and delicious and it sounds like my kind of recipe since it requires only two bowls and a wooden spoon. I hope you have a good day!
I like how you looked for a review by a home cook. I agree that sometimes professional reviews aren't as "honest" about the recipe's taste or instruction. These look great, especially with the oozing butterscotch!
Interesting combo of flavors but it sounds and looks amazing! Count me in!
Ok these are what I am trying for my picnic this weekend, looks like they travel well and be a huge hit thanks Mary!
What would be not to love? These look like they would fill the bill for any dessert tray.
wow.. I have been following the recipe from joy of cooking which has been hit or miss. Yours looks so gooey and delicious!
My boys love brownies, I've just had my lunch and I feel hungry now! These brownies look so delicious! Have a great day Mary and thanks for sharing.
Cheers
Fudgy brownies are definitely my favorite, so I'm glad they turned out this way! I am completely sold on anything butterscotch-y. Hope you have a wonderful day, Mary!
These sound really good!
Although I prefer the chocolate style brownie, butterscotch is next in line :) Ok, ok.. I'm a brownie fan, what can I say?? These look wonderful, Mary!
Simple but sounds heavenly! Tempting click too...
These look amazing!
Love butterscotch! Mary, those look amazing.
mickey
I love how simple they are to make! I'll be bookmarking these babies for later! :) Thanks for sharing. Have a lovely day!
I am crazy about brownies and yours look perfect and surprisingly EASY! A must try!
Those look too good to be true! Anything with butterscotch sends me to the moon!
Mary
I've had the brownies at Clementine and they are delicious! I was so excited when the LA Times featured them. Looks like you've made them right, or pretty close to right. They are supposed to be moist and chewy, not cake like, although I agree the LA Times pic was a bit misleading. These are yummy addictive brownies!
Wow - I love how gooey they look and I can't wait to try them!
Wow! This is gorgeous.
What an amazing treat! I MUST make these very soon! Miriam@Meatless Meals For Meat Eaters
I'm not a traditional brownie kind of girl BUT butterscotch is my weakness, so these sound fantastic!
my husband would loves these! they look so perfectly gooey.
Wow Mary, the brownies look delicious...moist and gooey, the way that I like it. The picture is just SO SO inviting...wish could have one right now with my coffee. Hope you are having a wonderful week :-)
I love your blog -- beautiful photos and wonderful recipes!
I made the Clementine butterscotch brownie recipe a few weeks ago (you can read about it here), and I measured everything by weight -- I did get brownies that were more similar to those pictured in the L.A. Times article. But your brownie looks decadently delicious!
You did a beautiful job cutting that brownie! That is the trickiest part for me :)
So moist and delicious looking Butterscotch brownies.. Drool worthy :D
These look deliciously gooey and wonderful!!!! Wish I had one, but I am making do today with Tastycake's new version of Tandycakes, brownie flavor.
As soon as you said butterscotch brownies, I knew they must taste heavenly!
I'm a bit ho-hum about traditional brownies. Been there, done that. But these! You had me at Butterscotch! I have all the ingredients. I'll make these when both of my boys are home, lest I eat them all!
Love how delicious this sounds!
These brownies look absolutely divine, Mary! I love butterscotch. I'll definitely have to try making these soon.
So these are more like blondies... LOVE 'em!! Butterscotch and walnuts are a heavenly combination! These could make a gray sky blue!
Yum! I also like the 1 year ago today recipe. It amazes me how good caramelized onions are and yet how nasty raw ones are! (to me at least)
I am such as sucker for the gooey brown sugariness of 'blondies'...every bit as decadent as chocolate brownies to me. If these are as good as you say then yes I'll be making them!
Sounds delicious--I definitely need to try these! Thanks for posting!
mmmmm they look fattening!!!
Looks delicious butterscotch with brown sugar, I will try them.
i'm craving those brownies in the worst (best) way, they look amazing!
Yummy! It is crazy how the photo just made me drool. So yummy looking Mary.
I like this take on brownies and the recipe seem so simple!
Fudgy, gooey deliciousness!! These look wonderful and that's great to hear they're so easy! I must try very soon!
I love how gooey and moist these brownies look! And you're right - the ingredients are so simple... Thanks for sharing, Mary!
these look DIVINE.
kelly
Decadently delicious!
Wow... those look so very gooey! I love butterscotch, and these look so rich, just like their chocolate counterpart.
Really awesome looking brownies! I wish I could have a piece
Oh wow...these look perfect! You are welcome to come over to my house and make these any time. ;)
it's been a long time i cone across a brownie without chocolates! these sounds really yummy!
Oh yes!
Fudgy is a bonus in my book - these look mouthwatering!
I think I need these to be part of my life.
These look excellent. I often go by weight and have greater success. I found I was packing my brown sugar too much. I was over an ounce off on a cup. That changed my blondies--success at last.
Hmmm..mm...this looks so addictive! Yum...
Kristy
Oh my gosh Mary... these look stunning. Drooling everywhere!
Mary,
Would you be able to tell me if you did anything differently from the recipe cause mine turned out thin and looked nothing like yours? Thanks.
MAN these brownies look great!
Natalie, I'll have to answer here because I have no other link to you. I used an 8-inch pan. I made no other changes to the recipe but the photo was taken at very close range and then cropped in photoshop which makes them look thicker than they actually are. Mine were the same thickness as a standard fudge type brownie. I'm making them again this weekend and I can actually measure them for you then. I hope this helps. Blessings...Mary
Funny, I DO have all the ingredients in my pantry.
Hi, Mary. I made these last night, but I made a mistake and 'read' 350 instead of 325 and baked them for 25 mins on 350, so they were firm and more of a cakelike brownie. My family really liked them because they thought them not very sweet. I thought they were good, but I was looking for more of the fudgey brownie like yours, so I am going to make them again soon. Hope you have a good day.
Mary you are an artist!
Desperately scratching the screen! ;-)
Hi Mary
After so long !
I am looking at your older posts which I had missed.
It’s great to see good information being shared and also to see fresh, creative
ideas that have never been done before.

I work two blocks from Clementine, near Century City in West Los Angeles, and these are one of my favorite things in the world. I also found the recipe in the lA Times Culinary SOS column, and i baked them this past weekend. I thought i should give you some feedback, since yours don't look right. The recipe posted by the L.A. Times GROSSLY underestimates the bakig time. The final product should not be runny or saucy, as yours appear to be (your look UNCOOKED in the middle). The batter rises, and then it FLATTENS. The final product is almost exactly the same as a good, homemade brownie, which is why Cementine calls them "butterscotch brownies". The corners and edges are CRUNCH and the middle is CHEWY. I baked mine at a lower temp (about 312-315 degrees) for about 45 minutes. I inserted a skewer in the middle, and it came out CLEAN. That is how I knew they were done. The only reason I can gice you this feedback is that I am familiar with the genuine produst. I hope you will give this recipe another try
Sorry, I’m not much of a baker but I’m dying to try this... one question.. do we used salted or unsalted butter?
