Flat Iron Burgers with Onion Marmalade, Blue Cheese and Arugula + Mazola Summer Grill Kit Giveaway


From the kitchen of One Perfect Bite...This delicious burger was created for a Mazola Corn Oil promotion. Chances are, you already have a large bottle of their corn oil sitting in your pantry, and that will make it easier for you to re-create this burger for your friends and family. If you don't, I hope you will soon remedy that with a trip to your nearest market. I tend to be a brand loyal customer and the oils I use are no exception. Mazola Corn Oil was used exclusively in this recipe. I used it to grease the grates of my grill, make the amazing purple onion marmalade you see and as an added ingredient in the burgers to keep them moist as they grilled. Did you know that corn oil has a high smoke point and can be used on grill grates to prevent sticking? While I routinely use it for marinades, I also use it in condiments where oil is a required ingredient. Researchers have recently found that corn oil is more effective than extra virgin olive oil in lowering LDL or "bad" cholesterol, so I use this heart healthy oil without concern when I prepare food for the grill. Summer Grilling Kit

· Mazola Corn Oil

· Mazola BBQ apron

· Stainless Steel 3-piece Grill Set from Weber Grills

· Four-way measuring spoon




Purple Onion Marmalade

Ingredients:
3 tablespoons Mazola corn oil
2 medium onions, halved and thinly sliced
3 cloves chopped garlic
1 cup red wine
1 teaspoon beef base
1/2 teaspoon black pepper
1 tablespoon brown sugar
1 teaspoon sherry wine vinegar

Directions:
Heat oil in a large saucepan. When it shimmers, add onions, cover pot, and cook until onions are soft, about 10 minutes. Add garlic and cook until it is fragrant, about 1 minute longer. Add wine, beef base, black pepper, brown sugar and sherry wine vinegar. Cook over medium heat until liquid evaporates, about 15 minutes. Season to taste with salt. Divide mixture into 2 parts. Set both portions aside to cool.



Flat Iron Burgers with Onion Marmalade, Blue Cheese and Arugula

Ingredients:

Patties
1-1/2 pounds flat iron steak, trimmed and cut into 1-1/2 inch cubes
2 tablespoon Mazola corn oil, divided use
1 egg yolk
1/2 cup purple onion marmalade, coarsely chopped
3 cloves garlic, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
.
4 hamburger buns, grilled just before serving
1/2 cup creamy blue cheese salad dressing
1-1/2 cups baby arugula
1/2 cup purple onion marmalade
1/2 cup crumbled blue cheese

Directions:
1) Divide steak into 2 batches. Process each batch in food processor, pulsing 10 times. Add oil, egg, marmalade, garlic,salt and pepper. Mix lightly. Form into 4 patties. Brush patties with Mazola corn oil.
2) Place burgers on preheated grill and cook on high until golden brown and slightly charred, about 3 to 4 minutes. Turn patties and cook until medium rare, about 3 minutes longer. Remove from grill and cover lightly with a foil tent.
3) Lightly toast hamburger buns.
4) Spread top and bottom of each bun with blue cheese salad. Cover bottom of each bun with arugula. Place burgers on top of arugula. Cover burgers with an equal portion of marmalade, then with an equal portion of blue cheese. Top with buns and serve immediately. Yield: 4 servings.
