Golden Nuggets

I had a young visitor today and he and his mother, who does not allow him to eat processed foods, were the inspiration for tonight's post. This is a recipe that will have limited appeal because it doesn't pack much bang for the buck, and the time it takes to prepare the nuggets may seem excessive to some. There is a lot of wait time associated with their assembly and while these are tender and delicious I do understand why many of you would prefer to take a pass. Permission granted, but you must promise to come back tomorrow.




Golden Nuggets...from the kitchen of One Perfect Bite

Ingredients:

Nuggets
1-1/2 pounds skinless and boneless breast of chicken, raw, cut into 1-inch pieces
1 egg white
1-1/2 teaspoons salt
1/4 teaspoon pepper
Breading
1 teaspoon turmeric
1 teaspoon pimenton (sweet smoked paprika)
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups flour
3 beaten eggs
2 cups panko or homemade bread crumbs
Oil for frying

Directions:
1) Place half of chicken in bowl of a food processor. Pulse 5 to 6 times to coarsely chop. Remove from processor. Add remainder of chicken, egg white, salt and pepper to bowl and pulse 20 times, or until a paste is formed. Remove to a large bowl and fold in chopped chicken. Chill until mixture can be shaped. Drop by rounded tablespoons onto a tray lined with parchment paper, forming nugget sized pieces.
2) Meanwhile bring about an inch of water to a boil in bottom of a steamer. Transfer nuggets to steamer rack and steam, covered, for about 20 minutes, or until nuggets turn white. Remove rack from steamer and let sit until the nuggets can be handled.
3) Add turmeric, paprika, salt and pepper to flour, whisking to combine. Coat nuggets with flour mixture, then working in assembly line fashion, dip in beaten eggs, then in panko crumbs.
4) Place an inch of vegetable oil in a large high-sided skillet. Heat oil to 360 degrees F, and working in batches, fry until nuggets are golden brown on both sides. Drain on paper toweling. Serve hot with a dipping sauce of your choosing. Yield: 20 to 24 nuggets.
