Uncommonly Delicious - My Recipe Rotation - Potato Curry
From the kitchen of One Perfect Bite...This is one of the newer recipes in my rotation. I originally made it to serve as a side dish, but I have since started to add thinly sliced pork or chicken to make the dish substantial enough to be a main course. I loved these potatoes the first time I served them and they are still growing on me. Here is what I had to say just a few months ago.
I stumbled on this recipe several months ago while looking for vegan dishes I could serve to a visiting friend. The recipe was created by Jennifer Harmon and I found this potato curry on her blog Peppers and Peaches. We have had it several times since then, and while he will not eat it as a main course, even the Silver Fox likes it as a side dish when it is served with plain grilled meat or poultry. The dish is easy to make and relatively inexpensive to prepare, so it is great to serve on a busy day or those times when the numbers at your table expand without warning and you need to extend a small entree with a hearty side dish. It takes about 5 minutes to prepare the ingredients for the curry and another 20 to 25 minutes for it to cook, so you can have it on the table within 30 minutes. The dish pulls elements from the Thai Mussaman curry and an Indian potato and pea curry that is called Aloo Matar. The coconut milk adds a smooth and lovely richness to the dish that makes it seem far more extravagant than it actually is. Chances are you'll have some extra sauce left over even if you use the full compliment of potatoes. I save it and serve it over rice noodles the following day, so nothing goes to waste. Bob's in the Kitchen - 3 Cup Chicken
From the kitchen of One Perfect Bite...This is a Taiwanese dish that gets its name from the ratio of the three main ingredients used to make it. The chicken is always made with equal portions of soy sauce, rice wine and sesame oil. This version of the recipe is fast and easy to prepare and while it lacks the burnished glaze that make so many Asian dishes beautiful, its taste more than makes up for its plain Jane appearance. I made rice and steamed snow peas to go along with it and it made for a nice supper. The recipe for the chicken can be found here.
On another note, Mary continues to improve, but her activity is still restricted. She can't bend, lift or push and she wears a protective shield when we are out. The doctor has found no additional tears and it looks like the retina has reattached, but there is still a large gas bubble in her eye that clouds her version. It will be several weeks, possibly months, before we know how much of her vision has been restored. She sends you all her best and will be back here as soon as she has been given the all clear.

Asian-Style Braised Chicken - Away A While Recipe Favorites
From the kitchen of One Perfect Bite...If you enjoy food with an Asian flair, you are in for a treat. This week's Frugal Friday feature is for a simple, soy braised chicken that is light, absolutely delicious and as easy on the pocketbook as it is the waistline. The dish can be made with bone-in or boneless legs or thighs. If you use boneless chicken thighs, cooking time can be cut from 25 to 10 minutes and the dish can be on the table in near record time. You will want to avoid overcooking the bok choy. I think you will find it helpful to separate the stalks into piles of white and green. The crunchy portion of the stalks will need to simmer for two or three minutes, but the green and leafy portions need only a dunk and should cook just until they are wilted. I like to cook the rice I serve with this dish before I actually begin to cook the chicken. That way I can get the chicken to the table while the bok choy is still crisp and its leaves are a vibrant green. Do try this chicken. It is hard to argue with a dish that is cheap, easy and delicious. It is one of my favorite weeknight meals and I think your family will enjoy it as much as mine does.
