From the kitchen of One Perfect Bite...When I plan a dessert or "coffee" table, I make it a point to include something chocolate among the dishes I prepare. While my personal taste runs toward lemon, chocolate is so universally popular that its presence is missed when it is not offered. So, with that in mind, I made a plate of chocolate cookies to include with the other dishes on my "coffee" table earlier this week. I was pressed for time, and in order to get everything done, I resorted to something I rarely do. I used a brownie mix as the base for the chocolate cookies I planned to serve. I used a Ghiradelli brownie mix as the base for the cookies, and it took all of five minutes to make these moist, intensely flavored chocolate bites. The cookies are not particularly attractive, but they are delicious. They will be most enjoyed by those who like the flavor of bittersweet chocolate. The cookies look undone when they come from the oven, but they continue to cook on the cookie sheets once they are removed for cooling. If you need cookies in a hurry, I recommend you give this recipe a try. All you need to make them is a bowl and wooden spoon, so its a great starter recipe for children or adults who find themselves working in a vacation cabin or poorly equipped kitchen. Brownie Mix Cookies...from the kitchen of One Perfect Bite courtesy of Danette's Recipes
Ingredients:
1 (20-oz.) box brownie mix (i.e. Ghiradelli Double Chocolate)
1/3 cup vegetable oil
2 tablespoons water
1 egg
Directions:
1) Preheat oven to 375 degrees F.
2) In a mixing bowl, mix together 1 bag brownie mix, 1/3 cup oil, 1 egg, and 2 tablespoons water. Batter will be very thick.
3) Drop in heaping tablespoons on a greased cookie sheets and bake 9-10 minutes. Cool on cookie sheets for 20 minutes before moving them. Yield: 12 to 16 large cookies.

Cookies should be so easy to bake, but I never know whow they will look or if they will be done. I needed your tip.
My grandsons would love these.
I have a box in my pantry (which I'd planned to use while our Florida guests were here, but ...). Never thought to make cookies instead of brownies. Why not give it a try? Good idea!
