From the kitchen of One Perfect Bite...While I must admit these taste more like cupcakes than muffins, they are, quite simply, delicious. Add to that the fact they are easy to make and you have the start of a really great breakfast, brunch, or morning coffee. I'm generally not a fan of muffins because I prefer the less treacly taste of scones and morning sweet breads. These, however, gave me pause for thought. I love cinnamon and these have that in abundance. They also have a wonderful texture and a crumb that makes them perfect to serve with morning or evening coffee. While I am lazy and prefer to make giant or Texas-size muffins, those who prefer the standard-size variety will find this recipe accommodating. Do make sure you thoroughly grease the pans you use, and if you prefer to use cupcake liners, make sure you spray the interiors of the paper liners with a nonstick spray to assure easy release. I really liked these muffins and will make them again for morning meetings or coffees. I think you will enjoy them as well. Here is how they are made.
Cinnamon Chip Muffins...from the kitchen of One Perfect Bite
Ingredients:
Muffins
2 large eggs
1 cup buttermilk
1 teaspoon vanilla
2 cups all-purpose flour
1/3 cup whole rolled oats
1 cup granulated sugar
1/2 teaspoon baking soda
1/2 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup cinnamon chips
Topping
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
Directions:
1) Preheat oven to 425 degrees. Grease a standard-size 12 muffin or a large-size 6 muffin pan. Alternatively, line cups with cupcake liners and spray the liners with nonstick spray.
2) Whisk eggs together in a small bowl. Add buttermilk and vanilla. Set aside.
3) In a medium bowl, mix flour, oats, sugar, baking soda, baking powder, salt, and cinnamon together.
4) Make a well in dry ingredients and add liquid ingredients. Stir only until combined. Add cinnamon chips.
5) Drop batter into greased muffin cups. Mix two tablespoons sugar and 1/2 teaspoon cinnamon together. Spoon cinnamon sugar over the muffins.
6) Place muffin pan in the oven. Immediately turn temperature down to 375 degrees. If making standard-size muffins, bake for 15 minutes or until done. If making large muffins, bake for 20 to 25 minutes, or until done. Baking times will vary depending on how well your oven holds heat. Cool the muffins on a wire rack. Yield:6 to 12 muffins.

Mary, I'm with you! I prefer those giant sized muffins too... The best muffins we ever found commercially were up in New England. We're alway looking for a great muffin. We've found some great scones here in East Tennessee. These cinnamon chip muffins sound great... Take Care, Big Daddy Dave
ReplyDeleteThese were really tasty. The recipe made about 18 regular sized muffins. I forgot to reduce the baking time since mine were smaller, and as such I over baked mine on accident. They were still delicious. They basically tasted like a cinnamon sugar donut. Tender on the inside with a crunchy cinnamon sugar crust all around. Really good, thanks for the recipe!
