Apple Walnut Pancakes


From the kitchen of One Perfect Bite...When the rains here start and the leaves begin to fall, I love to make these pancakes. There is something about them that speaks to fall. I'm not particular about when I serve them and they have performed breakfast, lunch and dinner duty in my kitchen. They are easy to prepare and I always have to make a double batch to please the folks at my table. The Silver Fox loves these served with smoked or homemade sage sausage. Smoked sausage is always available in supermarkets, and truth be told, my sage sausage is awfully easy to make, so he gets one or the other every time I serve apple pancakes. I do hope you'll give this recipe a try. Here is how the pancakes are made.

Apple Walnut Pancakes...from the kitchen of One Perfect Bite

Ingredients:
1-1/4 cups all-purpose flour
3 tablespoons sugar
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups buttermilk
1 large egg
2 tablespoons melted butter
1 medium apple, peeled and grated
1/3 cup finely chopped walnuts

Directions:

1) Combine flour, sugar, baking powder, cinnamon, baking soda and salt in a medium bowl.
2) Whisk together buttermilk, egg and butter in a small bowl. Add buttermilk mixture to flour mixture stirring just until flour mixture is moistened. Gently fold in apple and walnuts.
3) Brush a nonstick griddle or large nonstick skillet with oil or spray with nonstick spray and set over medium-low heat. Using a scant 1/4 cup for each pancake, pour batter onto the griddle. Cook until bubbles begin to appear and the edges of pancakes are dry, about 2 minutes. Turn pancakes over and cook until lightly browned, about 1 to 2 minutes longer. Transfer pancakes to a plate and keep warm. Repeat with the remaining batter, making a total of 12 pancakes.

Lemon Poppyseed Bread


From the kitchen of One Perfect Bite...Every generation develops recipes that catch the fancy of young women when they first begin to cook. Toll House cookies have been around for decades and they're as popular today as they were when I was 18. Other recipes have shorter life spans. Even the good ones can fall to the wayside because of sea changes in the way we live or what we think to be important. There was a time when tea breads enjoyed the same popularity as cookies, and young women strove to master their making. We have, however, become a nation of multi-taskers and afternoon tea, for most anyway, has become a quaint remembrance of a ritual now past. While recipes for quick breads abound, tea breads are becoming less common. I want to pass mine on to my daughters, and, so, I record it here. The one I finally settled on is at least 2 decades old and it was developed in the test kitchen that serves Land O' Lakes Creamery. The combination of lemon and poppyseed is one of those lovely marriages that sometimes occurs in the food world. I love this recipe because it keeps the poppyseeds under control. An awful lot of recipes overdo their use and the finished bread or cake ends up looking like it has a disease. Not so here. This is a lemon bread that happens to use poppyseeds in the batter. The use of a glaze is optional with this bread. I prefer to brush the warm bread with limoncello, but I've included instructions for a glaze should you want to use one. Quick Bread Round-Up

From the kitchen of One Perfect Bite...The gifts I've made for our neighbors this Christmas are simple baskets that include a small bread board, a jar of cranberry conserves and two loaves of quick bread, one sweet, the other savory. I've made a lot of bread this year and I had to puzzle what my choices for gifting would be. I could have used any of the recipes that appear in today's round-up, but I finally decided to make a seasonally colorful French olive bread and streusel topped pumpkin and pecan bread that I particularly enjoy. I've found that quick breads make wonderful token gifts for the holidays. They are easy to put together and they are always appreciated. There is a good deal of truth in that old saw, "Nothing says lovin' like something from the oven." So, if you still have gifts outstanding, may I suggest that you fire up the oven and have a go at one of the recipes that appear below.
