Smoked Salmon and Scrambled Egg Pizza with Red Caviar



From the kitchen of One Perfect Bite...This brunch pizza is a study in wretched excess. It is also delicious and will make any late morning meal special. The pizza is loosely based on one that was developed by Wolfgang Puck and served as part of a holiday brunch at Postrio, one of his restaurants. The idea of pizza for breakfast or brunch may be off-putting to some, but if you look at the ingredients used here, I think you'll be pleasantly surprised. While smoked salmon and caviar aren't everyday foods, the components of this dish are really breakfast items that are served in a slightly different way. I've simplified the original recipe and eliminated making the pizza crust. I use pocketless pita bread as the base for the pizza and it works quite well. It makes life much easier, but if you'd like to see the original recipe you can find it here. This wonderful dish is easy to make and I have only one caution to share with you. Do not over cook the eggs. They should be barely set when spread on the pizza base. They will continue to cook in the oven and they'll be rubbery if they are overdone. I know those of you who try this brunch-style pizza will love it. Here's the recipe. We'll not talk of cost.

Smoked Salmon and Scrambled Egg Pizza with Red Caviar...from the kitchen of One Perfect Bite inspired by Wolfgang Puck

Ingredients:
1 8-inch pocketless pita bread
4 large eggs
1/4 cup milk
Kosher salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
1/4 cup shredded mozzarella cheese
1/4 cup shredded Fontina cheese
2 ounces thinly sliced smoked salmon
1 teaspoon chopped fresh chives
2 tablespoons salmon roe

Directions:
1) Place a pizza stone on middle rack of oven. Preheat oven to 500 degrees F. Place pita bread on a flat surface.
2) In a bowl, whisk together eggs, milk, and salt and pepper to taste. Heat a nonstick skillet over medium-high heat. Add olive oil and butter. When butter melts, add egg mixture and cook, stirring with a wooden spoon, until slightly set but still very moist, about 4 minutes.
3) Immediately spread eggs on pizza, leaving a 1/2-inch border. Spread cheeses on top. Using a peel or large spatula, carefully transfer pita to hot pizza stone and cook just until cheese melts and starts to bubble, about 5 minutes. Use peel or large spatula to transfer to a cutting board. Arrange smoked salmon on top. With a large, heavy knife, cut into wedges. Garnish with chives. Top with salmon roe. Serve immediately. Yield: 2 servings.

Risotto with Smoked Salmon, Spinach and Peas



From the kitchen of One Perfect Bite...This is a light and lovely entrée that's packed with flavor. It is perfect for Meatless Monday or any day you are looking for something that can be quickly made and is easy on the palate. I normally serve risotto as a side dish, but the addition of smoked salmon and loads of vegetables gives this dish enough heft to serve as a delicious one-dish meal. The intense flavor of the the salmon permeates the rice and produces a wonderfully flavorful meal in about 30 minutes. I wanted to begin the new year with a series of recipes that included something old, something new, something borrowed and something blue. This is my offering for the "something old" in that equation. The recipe I've adapted was developed about 20 years ago by Marian Burrows, a cookbook author and journalist who is a senior staff write at the New York Times. I make this recipe at least once a year for my family who really enjoy it. I think you might like it, too. The ingredients, as listed below, will produce three meal-size servings. Here's the recipe.

Risotto with Smoked Salmon, Spinach and Peas...from the kitchen of One Perfect Bite inspired by Marian Burrows

Ingredients:
1 clove garlic, minced
1 cup minced onion
1 tablespoon olive oil
5 cups low-sodium chicken broth
1 cup arborio rice
1/2 cup dry white wine or dry vermouth
4 to 5 ounces baby spinach washed, stemmed and torn or cut into smaller pieces
3 ounces smoked salmon, diced
1 cup frozen peas, thawed
1 cup grated Parmigiano Reggiano cheese
2 teaspoons lemon juice

Directions:

1) Heat oil in 2-quart pot. Saute garlic and onion in hot oil until they begin to take on color.
2) Meanwhile, pour chicken broth into a separate pot and bring to a simmer.
3) Add rice to garlic and onion mixture, stirring until well coated. Add wine and cook until liquid has almost evaporated, about 2 minutes.
4) Add 1 cup of hot broth to rice and cook over high heat, stirring very often until liquid has been absorbed. Repeat procedure two to three times, or until rice is almost cooked.
5) Add final cup of broth to pot along with spinach, salmon and peas. When rice is tender and some liquid remains, add rice and lemon juice. Stir well. Serve immediately. Yield: 3 servings.

Smoked Salmon Quesadillas - Pink Saturday



From the kitchen of One Perfect Bite...This is a lovely, quick appetizer that has great eye appeal. While it's easy to prepare, it's stylish enough for guests and will be loved by family and friends alike. Many of you are familiar with a version of this appetizer that is served on thinly sliced rye bread. I use fried flour tortillas to make mine. The base recipe uses goat cheese as a pillow for thinly sliced smoked salmon. Whipped cream cheese or mascarpone can be substituted for the chevre and herbs other than dill can also be used. This is one of my favorite informal appetizers and I make it a point to keep the ingredients need to make it on hand. Smoked salmon is plentiful here in the Pacific Northwest and it is slightly less expensive than in other areas of the country. Folks with a fisherman in the neighborhood are luckier still, as the bounty of our rivers is often shared. It takes about 15 minutes to make this dish. If you try it, I think you'll agree that it is time well spent. Here's the recipe.

Smoked Salmon Quesadillas
...from the kitchen of One Perfect Bite

Ingredients:
3 ounces chevre or whipped cream cheese
1 tablespoon well-drained prepared horseradish
1 tablespoon + 1 teaspoon fresh dill or chives
Salt and pepper to taste
3 tablespoons olive oil
3 (7-inch) flour tortillas
4 to 6 ounces smoked salmon
1 tablespoon fresh lemon juice

Directions
:
1) Combine cheese, horseradish, and 1 teaspoon dill or chives in a small bowl. Beat with a spoon until smooth and well-blended. Blend in salt and pepper to taste. Set aside.
2) Heat oil in an 8-inch skillet set over medium-high heat for 1 minute. Fry tortillas, one at a time, until both sides are lightly brown, about 2 minutes. Drain on paper towels.
3) Spread 3 generous teaspoons of cheese mixture on each tortilla. Arrange smoked salmon slices over over cheese. Sprinkle with 1 tablespoon reserved dill or chives. Drizzle with fresh lemon juice. Cut each tortilla into six pieces and serve immediately. Yield: 6 servings.

Kedgeree - Pink Saturday



From the kitchen of One Perfect Bite...Grandma Maude was not an Anglophile. Famine Irish had long memories and the only good thing she would attribute to the British was the Magna Carta. She did, however, love to cook and tell tales - some tall, some true - that were sure to make us smile. She'd let novel bits of England into her kitchen to assure those smiles. Bubble and Squeak was a favorite of hers and she, of course, had a tale to match the dish. For the uninitiated, Bubble and Squeak is a homely dish made mostly of potatoes and cabbage. It is twice cooked. The bubble represents the boiling of vegetables and the squeak is the noise made when they are turned into a skillet and fried. This was heady information for five year olds. Almost as good as Bangers and Mash and Kedgeree. In our world, Kedgeree was an exotic dish that set us apart from those who had tuna casserole on Friday nights. In truth, Kedgeree is a lightly curried breakfast dish made from rice, smoked fish, boiled eggs, parsley and some lemon juice. While its considered an English dish, it roots are Indian and it is probably an adaption of a rice and lentil dish called Khichari. The British altered the dish to suit their tastes and Grandma Maude altered it to suit hers. She dropped the eggs and the curry and created a thirty minute meal that would make the most harried of cooks smile. This is not company fare, but it is wonderful for a family lunch or supper. Here's the recipe we use.

Kedgeree...from the kitchen of One Perfect Bite

Ingredients:

2 tablespoons butter
1 tablespoon vegetable oil
1 medium onion, finely chopped
1 teaspoon minced garlic
1 cup long grain rice
1-3/4 cup fish stock or reduced-sodium chicken broth
8 ounces salmon fillet, skinned and chopped
3 ounces smoked salmon, chopped
2 tablespoons heavy cream
2 tablespoons chopped fresh dill
3 scallions, finely chopped
Salt and pepper
Garnish: dill sprigs and lemon slices

Directions:
1) Combine butter and oil in a large saucepan. Cook until butter melts. Add onion and cook over low heat until soft but not brown, about 10 minutes. Add garlic and cook until fragrant, about 30 seconds.
2) Add rice and cook, stirring constantly, until it is transparent, about 3 minutes. Add stock and stir well. Bring to a boil, cover pan, and simmer gently, for 10 minutes.
3) Add fresh and smoked salmon. Stir well. If rice seems dry add more stock. Cook until fish and rice are tender and all liquid has been absorbed, about 6 minutes.
4) Remove pan from heat. Stir in cream, dill, and scallions. Season to taste with salt and pepper. Garnish and serve immediately. Yield: 4 servings.
