From the kitchen of One Perfect Bite...Bob and I celebrated our 49th anniversary last night with a strange pick up meal. Many of you know that the Silver Fox recently had an intestinal obstruction that required a laparotomy. While he is much better and finally up and about, his appetite and sense of smell are still not what they were. I'm trying to avoid serving strongly flavored and wildly aromatic foods until I know the comeback kid is really back and can handle his regular diet. That won't be much longer now, but this brief period of restriction did put a crimp in our celebration. Our feast consisted of egg flower soup, poached chicken, and steamed broccoli. I know you're dying to know what we had for dessert. I've been making a lot of puddings this week, mostly lemon flavored, so, I decided to vary the menu a bit and make a pudding using the strawberries I had in the refrigerator. I had seen a recipe at The Prepared Pantry that combined ingredients used in a puddings with those used in a mousse and it seemed worth trying. While I substituted whole milk for the cream in their version and had to strain the berries to remove small seeds, I basically used the recipe as it was written. The end result was passably pleasant and pink, but not at all inspired. I think I'll do ice cream or a true mousse next time around. Here's the recipe I used for the strawberry pudding.
Strawberry Pudding...from the kitchen of One Perfect Bite courtesy of The Prepared Pantry
Ingredients:
3/4 cup granulated sugar
1/4 cup cornstarch
1 1/2 cups strawberry puree strained to remove the seeds
2 whole eggs
3 large egg whites
3 cups cream
2 tablespoons butter
2 teaspoons vanilla
Directions:
1) Whisk sugar and cornstarch together in a heavy saucepan. Stir in strawberry puree and milk. Cook and stir over medium heat until mixture is thick and bubbly. Cook for two minutes more and then remove from heat.
2) Whisk whole eggs and egg whites in a small bowl. Temper eggs by drizzling one cup of hot liquid into egg mixture while stirring.
3) Add tempered egg mixture to contents of pan. Bring mixture to a gentle boil and simmer until mixture reaches 160 to 165 degrees, about two additional minutes. Remove from heat and stir in butter and vanilla.
4) Pour pudding into a bowl or dessert cups, cover with plastic wrap. Refrigerate to chill. Yield: 6 servings.

If I didn't read the title first, I would have taken it as strawberry mousse...so creamy and smooth.

Happy Anniversary!
I, too, thought strawberry mousse. Pudding doesn't appeal to me (except rice pudding) but this does look yummy and that photo made me look! Oh, I love The Prepared Pantry, too! (and Penzey's... do you know Penzey's?)
Another vote for ice cream next time... and I do pray your hubby continues to improve daily.

Wow 49!! Congratulations on a fine run in the marriage dept :) Just think how much tastier that food will taste when the fox is back 100%!
Cheers.
49 years ... how delicious. Continuing to pray for your husbands full recovery.
Many congratulations to you, and I hope that Bob will be back if form very soon, all the best wishes from me! And Mary, never mind if you had a simple celebratory dinner, you have a year now to plan the big golden anniversary!
Did you know that in Italy we have gold colour sugared almonds for this occasion (and silver for 25, white for wedding, pink for baby girl, blue for baby boy and red for graduation). In Italian we call them confetti!
Also all the presents are meant to be 'golden' :-)!!
Have a good Sunday
Ciao

Wow, congrats on 49 years! I can't believe you've been married that long--for some reason I thought you were only in your thirties or forties. LOL! Strawberry pudding sounds interesting, but I tend to think that you're right and it would be better to use them in an ice cream of mousse.
Mary, todo se ve delicioso!!!
Un saludo!
Happy anniversary, Mary. This sounds wonderful. Our strawberry season is in full swing and my girls would just love this!
Happy 49th and 49 more. I will keep this recipe for my strawberry loving granddaughters.
Happy belated anniversary! I am glad he is feeling better. I love the red checked napkin in your picture -- so pretty and prefect with the pudding! I have a multitude of strawberries these days - I just love them! Hope you have a great day!
49 years of marriage is truly worth celebrating!!!! And this strawberry pudding is perfect for the ripe strawberries coming into markets right now! Many more years of happiness to you!! xoxo Roz
Happy Pink Saturday, Mary. I'm glad your Silver Fox is on the mend. And, many congratulations for your anniversary. It seems you and Jeanne, our featured blog, were married at the same time.
The strawberry pudding does look pretty and quite tempting. We had fresh strawberries this weekend, and they were delicious.
