I had no idea about the Mazola!!! I believe Mazola has different oils now, too. This does look really creamy!

Interesting post. I am not sure if we can get corn oil here. Everything I can remember seeing is either, rape, sunflower or olive oil and I always use the latter except on the very odd occasion when I deep fry.

A diet I was on once years ago printed a similar recipe in their book. It was amazingly good and it made you think you were eating mashed taters. Can't remember exactly now, but am pretty certain roasted garlic was not involved. Great idea.
Mary, I've had and liked garlic mashed cauliflower before...but only in a restaurant. Mazola and cream cheese...I would think that the latter would really make this dish nice and creamy. Thanks for the recipe. Take Care, Big Daddy Dave
