Ingredients:
1 pound ground beef
1/2 cup chopped onion (from 1 medium-sized onion)
1/2 cup chopped celery (from 1 stalk)
2 cloves garlic, minced
2 tablespoons all-purpose flour
Two 14-ounce cans reduced-sodium beef broth
2 medium-sized potatoes, chopped coarsely
One 14 1/2-ounce can diced tomatoes, drained
One 8-ounce package shredded Cheddar and American cheese blend (2 cups)
One 6-ounce can tomato paste
1/4 cup ketchup
1 to 2 tablespoons Dijon-style mustard
1 cup whole milk
6 cocktail buns or brown-and-serve rolls, split
1 tablespoon butter, melted, or olive oil
Assorted condiments, such as pickles, onions, lettuce, mustard, and/or ketchup, for serving (optional)
Directions:
1) In a large pot, cook beef, onion, celery, and garlic over medium heat until meat is browned and vegetables are tender; drain fat. Sprinkle flour on beef mixture. Cook and stir for 2 minutes. Stir in broth and potatoes. Bring to a boil, stirring occasionally. Reduce heat to a simmer and cook, covered, until potatoes are tender, for 10 minutes.
2) Stir in tomatoes, cheese, tomato paste, ketchup, and mustard. Cook and stir until soup comes to a gentle boil. Stir in milk and heat through.
3) Preheat broiler. Place split buns, split sides up, on a broiler pan. Brush with melted butter or olive oil. Broil 4-5 inches from the heat until golden, for about 1 minute. Serve soup with toasted buns and top with condiments. Yield: 4 to6 servings.

It does look just delicious, and a real man's soup!! But I would also love it.
I think it sounds really tasty! When the weather cools down a little I will give it a go.
I think the soup sounds great Mary! I made something similar for the first time last year and while I wouldn't want to eat it often, it's a great Friday lunch treat every once in a while:@)
There's just something about mustard (and ketchup) that is a guy thing. I put too much mustard on my burger at a diner the other day and said so to to my husband. He took a bite and declared it to be perfect. So your point is correct Mary (in my family at least) about guys and mustard.
Have a lovely weekend.
Sam
I suspect my man would love it too;)
I have a similar recipe for a cheeseburger soup that I had put off for a while now because of the use of mustard!! lol Sort of glad I waited. At least now I know to add a little at a time :) It sure does look delicious!
I had seen many baked potato soup recipes and never clipped one. When you posted your's, I tried it and we loved it. This one I'll have to think about since I'm a hamburger purist. No cheese for me. Mustard, raw onion and dill pickles only.
Best,
Bonnie
Mary, I've had cheeseburger soup in a restaurant...and I really liked it! I don't recall a mustard taste though, which is good since I'm more of a ketchup guy. This is clearly a guy's type of soup though... Take Care, Big Daddy Dave
Mary, this is the first cheeseburger soup recipe I've seen that I thought I would like, and I suspect my picky eater husband would like it, too. I just printed it off. Can't wait to give it a go!
Cheeseburger soup,am hearing for the first time..Wow makes me drool.
Dear Mary, This is my kind of soup!! I would love this with thick crusty bread. Blessings dearest and hugs, Catherine xo
Looks delicious.
It sounds like a good, bloke soup for sure. :-) I know Bear would love it. :-)
I actually think I would like the mustard in this soup Mary. Although, I can still remember the first time they put mustard on my hamburger at one of those fast food place. Boy was I surprised and not a happy camper.
I can't wait to be able to get back into cooking in the kitchen. Soup is a big hit around here and even marion would like this one!
Thanks for sharing...
I always add Ketchup & Mustard on my cheeseburgers, Mary, so this soup sounds very good!
