Child's Play - Chocolate Mayonnaise Cake


From the kitchen of One Perfect Bite...This is an old standby that's wonderful to pull out of mothballs when you have young children who want to help in the kitchen. It requires no special equipment, and truth be told, it's more an exercise in measurement than technique. That means it's a cake they can make with minimal adult supervision. Chances are you have everything needed to make the cake in your pantry and refrigerator. For as wild as it might sound, the mayonnaise subs for the eggs and shortening that are generally found in cake recipes. It works. The end result is a moist cake that many of us loved when we were children. It can be frosted, but a sprinkling of powdered sugar is all that's really needed to finish it. If you have never made the cake, I hope you will give it a try. If you have made it,  I hope the memory of it will make you smile. Here's the recipe.


Chocolate Mayonnaise Cake...from the kitchen of One Perfect Bite courtesy of Recipe Lion

Ingredients:
3/4 cup cocoa
3 teaspoons vanilla
3/4 teaspoon salt
1-1/2 cup sugar
1-1/2 cup mayonnaise
3 teaspoons baking soda
1-1/2 cup hot water
3 cups flour, sifted

Directions:
1) Preheat oven to 350 degrees F. Grease and flour a 9 x 13-inch pan.
2) Mix cocoa, vanilla, salt, sugar and mayonnaise in a large bowl.
3) In a separate large bowl, mix baking soda into hot water. Water will rise and fizz so be sure you are using a bowl large enough to prevent overflow.
4) Slowly fold soda water into cake mixture and mix well. Add flour a little at a time while stirring, mix well but do not beat.
5) Pour into prepared pan and bake for 30 to 35 minutes. into a greased and floured 11x15 or 9x13 cake pan and bake about 30-35 minutes. Remove pan and set on a cooling rack.

Oh wow...did I hear right? Chocolate mayonnaise cake? It makes sense though, and what a good idea! It looks so moist and chocolatey!

I love these simple, old-school recipes. Reminds me of my grandmother's crazy cake, made with vinegar and mixed in the cake pan.

Oh yes! I grew up with this recipe or one very similar from my Grandma. It was our birthday and special occasion cake. $100 Mayonnaise Cake I think is what she called it. The best chocolate cake. Now I will go and dig it out to see how they compare. :)
