Honey Soy Baked Chicken Breasts


From the kitchen of One Perfect Bite...This is a nice recipe to have at your fingertips when you are going to be out for the day. The chicken can marinate while you are gone and it can be placed in the oven as soon as you get back home. If you make rice while the chicken bakes, you can have a meal on the table an hour after you walk in the door. There are many versions of this recipe, but I use the one I found on Rock Recipes several years ago. It is a well used recipe and I highly recommend it to you when you need a simple week night meal. The recipe can be halved or doubled and if you prefer you can use bone-in chicken thighs rather than breast meat. Here is how the chicken is made.

Ingredients:
1/4 cup honey
1/4 cup light soy sauce
1/2 teaspoon freshly ground black pepper
1 tablespoon minced garlic
1 tablespoon finely grated fresh ginger root
4 large bone-in chicken breasts with skin

Directions:

1) Combine honey, soy sauce, black pepper, garlic and ginger and place in a ziplock bag. Add chicken, seal and refrigerate for several hours or overnight.
2) Preheat oven to 375 degrees F. Line a cookie sheet with aluminum foil. Pour marinade into a small pan and bring to a boil, cooking until syrupy bubbles form. Set aside.
3) Place chicken on cookie sheet and bake, brushing several times with marinade, for about 45 minutes, or until chicken has an internal temperature of 170 degrees F. Yield: 4 servings.

I've been making wings and thighs with a similar marinade for years. The only difference is I add ketchup to the mix. Love the caramelization. Don't think I've ever used chicken breasts, something I intend to remedy soon.
