Nutella and Hazelnut Fudge



From the kitchen of One Perfect Bite...This simple recipe for Nutella fudge is a bit different than the one that was so popular on blogs during the run-up to the Christmas holiday. This version was developed by Elizabeth LaBau who writes the candy guide at About.com. It's a nice recipe and with Valentine's Day just ahead of us, I thought those of you who make candy for your sweet things might like to see the recipe before V-Day actually arrives. This fudge is made with Nutella and it gets an added flavor boost from the addition of toasted hazelnuts. Hazelnuts, or filberts, if you prefer, are a major crop in the state of Oregon, so I use them a lot in my cooking. As a matter of fact, I like them well enough to go for extra flavor whenever I can, so I use hazelnut rather than vanilla extract when I make this fudge. I realize that most of you live in areas where hazelnut extract can't be found. If you'd like to try it, a quick "google" search will return several sources from which it can be ordered. This fudge is fine when made with vanilla but its flavor is really enhanced by the addition of the hazelnut extract. It is smooth and creamy and if you like fudge, you'll like this version. Here's how it is made.

Nutella and Hazelnut Fudge

Ingredients:
1-1/2 cups granulated sugar
2/3 cup evaporated milk
2 tablespoons butter
1/2 teaspoon salt
1-1/2 cups (9-oz.) semi-sweet chocolate chips
1 (7-oz.) jar marshmallow cream
1 cup chocolate-hazelnut spread, like Nutella
1 teaspoon vanilla extract or 1-1/2 teaspoons hazelnut extract
1/2 cup chopped toasted hazelnuts (optional)

Directions:

1) Prepare an 8x8 pan by lining it with aluminum foil and spraying foil with nonstick cooking spray.
2) Place sugar, evaporated milk, butter, and salt in a medium saucepan over medium-high heat. Stir until sugar and butter dissolve, then wash down sides of pan with a wet pastry brush to prevent sugar crystals from forming.
3) Insert a candy thermometer into syrup and cook, stirring constantly, until temperature reaches 236 degrees F (113 C). If you are not using a candy thermometer, bring candy to a rapid boil for 5 minutes.
4) After it reaches 236 F, or 5 minutes of boiling, remove pan from heat and add chocolate chips, stirring until they're completely melted.
5) Next add marshmallow cream, Nutella, and vanilla extract, and stir until everything is well-mixed. Add chopped toasted hazelnuts last, if you're using them.
6) Scrape fudge into prepared pan and smooth it into an even layer. Allow fudge to sit at room temperature to firm up, for about 2 hours, or refrigerate for 45 minutes.
7) Once set, remove fudge from pan using foil handles. Cut it into small 1-inch pieces to serve. Store in an airtight container at room temperature for up to two weeks.

Adult Hot Chocolate Made with Nutella and Fortified Spirits



From the kitchen of One Perfect Bite...Sometimes this is a tough job. I had to test this recipe over and over again to get the proportions just right for you. Obviously, I couldn't recommend the spirits used to spike the hot chocolate without first verifying they were compatible with its Nutella base. They are! If you are looking for a special bedtime or fireside drink, I think you might enjoy this one. It's special. Here's the recipe.

Adult Hot Chocolate with Nutella and Fortified Spirits...from the kitchen of One Perfect Bite

Ingredients:
1/3 cup Nutella
1-1/3 cups milk, divided use
2 jiggers spirits (i.e. Jamesons, Baileys, Frangelico Kahlua)
Garnish: Whipped cream and cocoa powder

Directions:

1) Place Nutella and 1/3 cup milk in small saucepan over medium heat. Whisk until blended.
2) Add reserved 1 cup milk, increase heat to medium-high, and whisk until hot and frothy. Pour into two 8-oz. coffee mugs. Pour 1 jigger (shot glass) of desired spirit into each glass and stir well. Top with heavy cream and sprinkle lightly with cocoa powder. Serve immediately. Yield: 2 servings.

Bavarian Hazelnut Cake


One of the glories of fall harvest is the profusion of nuts that come to market for the Halloween and Thanksgiving holidays. We are especially blessed in Oregon where walnuts and hazelnuts abound, and, fair or not, our farmer's markets provide more of both for less. Cathy, of Wives With Knives, is one of those hardworking vendors. Cathy operates the Bavarian Nut Company and has a wonderful assortment for the folks who frequent her booth at the Beaverton Farmer's Market. Stop by and see her if you can. Today's recipe - a childhood memory - comes from Hannie's kitchen. It's an exceptional snack cake and comes highly recommended. It will improve in flavor if allowed to "ripen" for a day before serving.


Bavarian Hazelnut Cake

Ingredients:
1 cup unsalted butter, room temperature
1 cup granulated sugar
3 large eggs, room temperature
1-3/4 cups all purpose flour, divided use
3/4 cup milk, room temperature
1 teaspoon hazelnut or vanilla extract
2 teaspoons baking powder
1 cup finely chopped, then toasted hazelnuts
Glaze:
8 ounces hazelnut spread (i.e. Nutella)
1/4 cup heavy cream

Directions:
1) Adjust rack to middle third of oven. Preheat oven to 375 degrees F. Lightly grease and flour a 8 x 11 x 2-inch baking pan or a 10-inch Bundt pan. Set aside.
2) In the bowl of a stand mixer fitted with a paddle attachment, cream butter and sugar. Add eggs, one at a time, mixing until batter is pale and lemon colored. Add 1 cup flour and stir to combine. Mix in milk and hazelnut or vanilla extract. The mixture will appear curdled. Combine baking powder, reserved 3/4 cup flour and toasted hazelnuts in a small bowl. Add to batter; mix until well-blended.
3) Scrape batter into prepared pan. If using an 8 x 11 x 2-inch pan bake for 35 minutes. If using a Bundt pan bake for 50 to 55 minutes. A cake tester inserted in the center of the cake should come out clean. Allow to cool for 10 minutes; invert and remove pan. Cool to room temperature.
4) Meanwhile combine hazelnut spread and cream in a small saucepan. Heat until hazelnut spread melts. Remove from heat and cool. Pour or spread over cake. Yield: 12 servings.
