Baked Ranch Potato Cakes with Spinach and Cheese
From the kitchen of One Perfect Bite...As the weather gets warmer, much of our cooking will move from the kitchen to the patio and our outdoor grills. I'm always on the prowl for side dishes that will go well with plain grilled meats or poultry and when I can't find them I create them. I developed this recipe for a contest sponsored by the folks at Hidden Valley Ranch. It's best to think of these as baked potato cakes that are enhanced with the addition of spinach and cheese. The cakes, however, get their special flavor from Hidden Valley Ranch Dressing mix. The cakes are baked rather than fried to retain the lovely color of the spinach and make a healthier side dish. I love the idea of baking them instead of frying because they are healthier. It's a good way of eating spinach!
