Greek-Style Roast Potatoes - We Are 238 Years Old Today

From the kitchen of One Perfect Bite...If you are still looking for something to serve with your steaks or plain grilled chicken, I highly recommend this simple potato dish. The potatoes are easy and inexpensive to make and they are simply packed with flavor. I made them for the first time last evening and I liked them so well that they will become are a regular feature at my table. The potatoes bake for what seems a long time, but they get brown and crusty and all-together delicious as they cook. I know those of you who try them will love them and serve them often. Here is how they are made.

Ingredients:
8 large potatoes, peeled, cut into large wedges ( about 6-7 wedges per potato)
4 to 6 garlic cloves, minced
1/2 cup olive oil
1 cup water
1 tablespoon dried oregano
1 lemon, juiced
Coarse salt
Coarse ground black pepper

Directions:

1) Preheat oven to 420 degrees F. Line pan with foil and coat with nonstick cooking spray.
2) Place potatoes, garlic, olive oil, water, oregano and lemon juice in a baking pan large enough to hold them in a single layer. Season generously with sea salt and black pepper. Toss to distribute all ingredients.
3) Transfer pan to oven and bake for 40 minutes. When a golden crust has formed on potatoes, remove pan from oven, stir to turn bottom of wedges to top and lightly season with more salt, pepper and a sprinkling of oregano. If pan appears dry, add 1/2 cup more water to pan. Return pan to oven and bake for another 40 minutes, or until potatoes are crusty and brown. Remove potatoes from pan and serve immediately. Yield: 6 to 8 servings.
