From the kitchen of One Perfect Bite...This is another of Mary's quick and easy pizzas. We live within walking distance of a Trader Joe's, so lavash, a thin rectangular flatbread, is always available to us. In this recipe, she tops it with Greek ingredients and it make a light and flavorful pie that you can have on the table in minutes. Stay next to the oven while the flatbread is under the broiler. It can quickly go from crisp to charred if you let it get away from you. The rest of the pie is child's play. This is not a substantial entree, so you will probably want to serve it with soup. As to the soup, I don't know how that aluminum can made its way into the garbage. Do try this, if not for dinner, than for a weekend lunch. The recipe is here.
