Child's Play - A Truly Simple Chocolate and Banana Snack Cake


From the kitchen of One Perfect Bite...This cake has many things going for it. Not only can children make it, it's also perfect to prepare when you are working in an ill-equipped summer cottage kitchen. The cake requires no mixing bowls or beaters and it's made in the same pan in which it bakes. Need more? The chocolate chips that top the cake make frosting unnecessary, and, as these things go, it is relatively inexpensive to make. It's also a great way to use up nasty over-ripe bananas. If you are looking for a serviceable cake that has mass appeal, I hope you'll give this simple creation a try. The recipe comes from the Betty Crocker website, and while it won't make your reputation as a cook, it won't harm it either. Here is how the cake is made.




Chocolate and Banana Snack Cake

Ingredients:
2 very ripe medium bananas
1-1/4 cups all-purpose flour
3/4 cup sugar
1/4 cup unsweetened baking cocoa
1/3 cup vegetable oil
1/3 cup water
1 teaspoon baking soda
1 teaspoon white vinegar
1/4 teaspoon salt
1/3 cup semisweet chocolate chips

Directions:

1) Heat oven to 350 degrees F. Place bananas in ungreased 8-inch square pan and mash with a fork. Stir in flour, sugar, cocoa, oil, water, baking soda, vinegar and salt. Sprinkle chocolate chips over batter.
2) Bake 35 to 37 minutes or until toothpick inserted in the center comes out clean. Cool completely, about 45 minutes. Yield: 9 servings.

The cake sounds like a fun one to try Mary! I have to chuckle, made my first attempt at cilantro lime rice Sunday and was ~underwhelmed~ to say the least... Here I see your Southwestern Cilantro Rice in the 'you might also likes', I've bookmarked it to try-thanks:@)

This looks good, although I think the chocolate chips are unnecessary (I don't frost my banana bread, after all). It would be a good camp recipe, too. I love super simple recipes. Keep 'em coming!
