Popcorn Balls


From the kitchen of One Perfect Bite...There was a time when Christmas would not be complete if we did not make popcorn balls to decorate the table and the Christmas tree. Back in the day, a hot caramel sauce was need to form and shape the balls for the holiday. Little hands had to be kept away from the mixture until it had cooled to a point where it would no longer burn. Things are easier these days and kids can be part of the production from beginning to end. This recipe is for basic popcorn balls, but you can add candy or additional flavors if you wish. Color can also be added to the melted marshmallow if you wish red or green balls to make the season even more festive. Here is a good basic recipe for popcorn balls.

Ingredients:
1 tablespoon vegetable oil
1/2 cup unpopped popcorn
6 tablespoons butter
5 cups miniature marshmallows

Directions:

1) Grease a 9x13 inch baking dish. Set aside.
2) Add vegetable oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Put popcorn in prepared pan.
3) Melt butter in a medium saucepan over low heat. Stir in marshmallows and cook until melted, stirring constantly. Pour marshmallow mixture over popcorn and mix with spoon to coat evenly.
4) Let mixture cool slightly. Smear butter on your hands or spray with non-stick cooking spray. Mix popcorn with your hands so that it is evenly coated. Form popcorn into 8 balls.

This brings back old memories as we made them to hand out at Halloween when I was I kid - back when homemade was much preferred to store-bought treats.
