Chipotle Cheddar Cornbread
From the kitchen of One Perfect Bite...I can't imagine ham without cheese or peanut butter without jelly. Some foods are just made for each other. In our house, chili falls into that category. I can't remember the last time I made a chili without serving cornbread on the side. I know you already have a recipe for cornbread, but I hope you are adventurous enough to give this loaded cornbread from the Culinary Institute a try. The only hard and fast rule for making cornbread is not to overmix it. I have one other to share with you. When you add ingredients to a standard cornbread it will require more time to cook. Make sure your bread is done before you take it from the oven. I have never had great luck keeping cornbread because it stales so quickly. When I have leftovers, I cube and freeze the cornbread and use it as the base for stuffing pork chops or chicken. Do give this recipe a try. I know you will like the cornbread. Here is how it's made.

Chipotle Brownies
From the kitchen of One Perfect Bite...A gal can never have too many recipes for brownies. At least that's my story and I'm sticking to it. I found this recipe in Family Circle magazine a while back and clipped it with the intention of trying it as soon as things settled down around here. It's became apparent that wouldn't happen any time soon, so this morning I pulled out my whisk and made the brownies while the bacon was frying. It took all of ten minutes to get these into the oven and they were finished before our breakfast had ended. Is dessert for breakfast acceptable? Yea or nay, I tried one just as soon as the brownies were cool enough to cut. This moist, fudge-like brownie has intense flavor that is enhanced by the addition of the chipotle powder. I think the brownies would be perfect with a bit more salt and vanilla, so you might want to double the amounts of each suggested in the recipe below. If you are looking for a slightly different brownie to add to your repertoire, you might want to give this recipe a try. Here is how these brownies are made.

Frugal Foodie Friday - Chupe de Pollo con Chipotle (Peruvian Chicken Chowder)
Chupe de Pollo con Chipotle Peruvian Chicken Chowder)...from the kitchen of One Perfect Bite courtesy of Cooking Light Magazine
Ingredients:
1 (7-ounce) can chipotle chiles in adobo sauce
1 tablespoon extra virgin olive oil
2 cups chopped onion
1 cup chopped carrot
1/2 cup chopped celery
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
6 garlic cloves, crushed
6 cups fat-free, less-sodium chicken broth
1-1/2 pounds skinless, boneless chicken breast
2 medium red potatoes (about 12 ounces), cut into 1/2-inch pieces
1 (15.5-ounce) can white or golden hominy, rinsed and drained
1/4 cup whipping cream
1 cup chopped seeded plum tomato
1/4 cup chopped fresh cilantro
1/2 teaspoon salt
8 lime wedges
Directions:
1) Remove 1 chile and 1 teaspoon adobo sauce from can; reserve remaining chiles and sauce for another use. Finely chop chile; set chile and sauce aside separately.
2) Heat oil in a large Dutch oven over medium heat. Add chopped chile, onion, and next 6 ingredients (through garlic); cook 7 minutes or until onion is tender, stirring frequently. Stir in broth; bring to a boil. Add chicken; cover, reduce heat to medium-low, and simmer 30 minutes or until chicken is tender. Remove chicken with a slotted spoon, and cool slightly. Shred chicken with 2 forks; cover and keep warm. Remove pan from heat; let stand 5 minutes.
3) Place one-third of broth mixture in a blender and process until smooth. Pour pureed broth mixture into a large bowl. Repeat procedure in two more batches with remaining broth mixture. Return pureed broth mixture to pan. Stir in potatoes and hominy; bring to a simmer over medium heat. Cook, uncovered, 20 minutes or until potatoes are tender. Stir in chicken and cream; simmer 5 minutes. Remove from heat, and stir in reserved adobo sauce, tomato, cilantro, and salt. Serve with lime wedges. Yield: 8 servings.

Frugal Foodie Friday - Chicken in Chipotle Sauce
My Thought for the Day can be found, here. If you like it, give us a thumbs up.
From the kitchen of One Perfect Bite...This recipe turned out to be a delightful surprise. At first glance it didn't appear to have a lot going for it, but I chose it for Frugal Friday testing because it cost next to nothing to make and I was tired of featuring bean dishes. Obviously, my expectations were low. As it turns out, the dish is enormously flavorful and downright easy to make. The chipotle cream sets this dish apart from others of its kind. It lightly penetrates the chicken and gives it a modest heat that is really pleasant on the tongue. I made the recipe, which comes from Allrecipes.com, exactly as specified, up to the point the chicken was removed from the sauce. The chipotle cream still looked thin to me, so I tented the chicken in foil to keep it warm while I reduced the cream until it had a slightly thicker consistency. I then returned the chicken to the pan, rolled the drumsticks in the sauce to coat all surfaces and let it sit, off-heat, for 10 minutes before I served it. I realized after the fact, that I could have thickened the chipotle cream with cornstarch had I been in more of a hurry. This is a really nice recipe and it has made it to my personal recipe rotation. I do hope you'll give it a try. It is hard to beat fast, easy, cheap and delicious. Here's how the chicken is made.
Chicken in Chipotle Sauce...from the kitchen of One Perfect Bite inspired by Allrecipes.com
Ingredients:
4 chicken leg quarters or 8 drumsticks
3/4 cup milk
1/2 cup sour cream or Mexican crema
1 chipotle pepper in adobo sauce
1 tablespoons chicken bouillon granules
1-1/2 teaspoons butter
Salt to taste
Directions:
1) Preheat oven to 375 degrees F.
2) Roast chicken legs in preheated oven until skin is crispy, and the meat is cooked through, about 30 to 40 minutes.
3) While chicken is roasting, puree milk, sour cream, chipotle pepper, and chicken bouillon granules in a blender until smooth.
4) Melt butter in a large pan over medium heat. Pour in chipotle puree, bring to a simmer, reduce heat to low, and season with salt to taste. Add cooked chicken legs, and simmer for about 10 minutes, until chicken has taken on the flavor of sauce. Yield: 4 servings.

Pork Meatballs in Chipotle Sauce - Albondigas

From the kitchen of One Perfect Bite...Folks who have followed One Perfect Bite from its inception, know that I do some unusual testing at this time of year. I tackle bookmarked recipes and untried holiday desserts in February and March because that's when I finally have time for testing and sorting through them. I also try to create a backlog of dishes that can be used when we're traveling or my family is visiting. I must be honest and tell you that I never dreamed this recipe would make it to the final cut. It was tested because our older grandsons love meatballs and I was looking for a recipe that would fill the bottomless pits we've come to call their stomachs. Bob made the first call and insisted I sit down and try them with him. Between the two of us we finished half the recipe. These are really nice. While you probably won't request them for your final meal, they make for wonderful family eating and add a little spice to an ordinary meatball dinner. The recipe was developed by Martha Stewart and I have no hesitation in recommending it to you. The heat in the recipe comes from chipotle chiles. If you use both of the recommended chiles, you will have pleasantly, but distinctively, hot meatballs. If that is more than you dare to chance, use just one. The meatballs can be made two days before serving and slowly rewarmed. They can be served over rice for a meal, but if made smaller they would also make a wonderful tapas-style appetizer. I know you'll like these. Here's the recipe.
Albondigas - Pork Meatballs in Chipotle Sauce...from the kitchen of One Perfect Bite courtesy of Martha Stewart
Ingredients:
1-1/2 pounds ground pork
1 medium onion, coarsely grated and squeezed firmly to remove excess liquid
1 small zucchini, coarsely grated and squeezed firmly to remove excess liquid
1 large egg
1/4 cup dried breadcrumbs
2 teaspoons dried oregano
1/2 teaspoon ground cumin
Coarse salt and ground pepper
1 (28 ounce) can whole peeled tomatoes, with juice
1-2 chipotle chiles in adobo
2 tablespoons vegetable oil
Cooked rice and chopped fresh cilantro, for serving (optional)
Directions:
1) In a medium bowl, combine pork, onion, zucchini, egg, breadcrumbs, oregano, cumin, 1-1/2 teaspoons salt, and 1/4 teaspoon pepper; mix well with a fork. Form into 16 (2-inch) balls; transfer to a plate, and place in freezer until firm, 10 to 15 minutes.
2) Meanwhile, combine tomatoes and chiles in a blender; process until smooth, and set aside.
3) Heat 1 tablespoon oil in a large, straight-sided skillet over medium-high heat. Add half the meatballs; cook until brown, turning often, 4 to 5 minutes; transfer to a plate. Repeat with remaining oil and meatballs.
4) Reduce heat to medium-low. Add pureed sauce and return all meatballs to skillet. Cover; simmer, stirring occasionally, 30 minutes. Uncover, and simmer until sauce is thickened, 5 to 10 minutes more. Season with salt and pepper. Serve over rice, sprinkled with cilantro, as desired. Yield: 4 to 5 servings.

Chicken Picadillo with Chili Lime Sauce - A Crock-Pot Meal

From the kitchen of One Perfect Bite...Recipes for picadillo, a Spanish hash, can be found in Mexico, Cuba, the Philippines, Puerto Rico and South America. The version I'm featuring today is an amalgam of recipes from various countries. I first sampled it at a luncheon held at the Institute for Culinary Education in New York City. The luncheon was part of an award ceremony sponsored by Rival, the company that makes the Crock-Pot slow cooker. On that occasion it was served as an appetizer. I served it this past weekend in large muffin-size tortilla cups. It was part of a tapas-type meal that we enjoyed as we watched the Academy Awards. This is an effortless dish that will really delight folks who love crock-pot meals. As nearly as I can determine, the recipe came from BBQ Pit Recipes, a cookbook distributed by the Crock-Pot Brand which, unfortunately, is no longer available. There are no tricks to making this. The chicken goes into the crock and is covered with a chipotle sauce that's made special by the addition of creme fraiche and lime. At the four hour mark, the chicken is removed from the pot and pulled into shreds. It's then returned to the pot to cook for another hour. It can be served over rice or with tortillas. I go the extra mile and make easy tortilla cups for serving. I warm 6-inch flour tortillas in the microwave for 20 seconds and then place them over inverted custard cups. The cups are used to help push the tortillas into Texas-size muffin pans. I bake the cups in a 375 degree F. oven until they are golden brown. I let them cool slightly before removing them from the pans. They can be made ahead of time and stored in air-tight contains or bags. While the cups are for show, the picadillo is delicious. I really hope you'll try this. I promise you won't be sorry. Here's the recipe.
Chicken Picadillo with Chile Lime Sauce inspired by BBQ Pit Recipes
Ingredients:
Chili Lime Sauce
1-1/2 cups creme fraiche ( 3/4 cup sour cream mixed with 3/4 cup plain yogurt may be substituted)
Juice of 2 limes
1/4 t0 1/2 teaspoon sambal or chili paste to taste
Pinch of sugar
Chicken
2 pounds boneless skinless chicken thighs, trimmed of any visible fat
2-1/2 cups crushed tomatoes
1 cup raisins
2 chipotle peppers in adobo
1/8 cup cider vinegar
3/4 cup chili lime sauce from above
1 teaspoon cinnamon
2 cloves garlic
1 teaspoon salt
Directions:
1) To make chili lime sauce: Mix creme fraiche, lime juice, sambal and sugar together in a small bowl. Cover and refrigerate until needed.
2) To make picadillo: Rinse and dry chicken and place in stoneware of a crock-pot or slow cooker. Combine tomatoes, raisins, chipotles, vinegar, chili lime sauce, cinnamon, garlic and salt in a blender or food processor and pulse to blend (do not puree). Pour over chicken and toss to coat. Cook on Low for 4 hours or until chicken is very tender. Using tines of 2 forks, shred chicken and cook for 1 hour more. Serve in tortilla cups or over rice. Top with reserved chili lime sauce. Yield: 6 servings.
