Yellow Cauliflower



From the kitchen of One Perfect Bite...Yellow cauliflower is finally available in farmer's markets in Oregon. I've been waiting a while for this variety to make an appearance. I was curious to see if there was any flavor change in the new hybrid. There is. It's milder in taste than it's parent and does not crumble as readily. I've prepared it steamed and stir fried and was very pleased with the results. It's color deepens as it cooks and it is much milder in flavor than most of the brassicas. I'll buy this whenever it's available.

Does it taste the same as the regular white one?

I've not seen this but will be on the lookout for it. Did buy some deep purple beans -- they turned regular green when cooked. (What a dish -- purple beans, green beans and yellow beans -- alas, won't happen!)

I have not seen this yet, but that bright yellow color makes me think buttery good LOL I like the idea that it has a milder flavor. I'm going to keep an eye open for this as well. Yumm...

I've never heard of this....didn't know it existed. I love cauliflower any way cooked/raw.

I'll have to keep my eyes open for this in our markets.

I saw this at the market yesterday and wondered about the flavor. Also saw a deep purple variety. It was too hot yesterday to think about eating anything so I came home emptyhanded. Now I'm sorry.

I have purchased yellow cauliflower also and I could barely bring myself to cook it, sitting there on my counter looking like a piece of art. The same with he purple variety. It is a litle bland, but I read that the cauliflower's purple color comes from the antioxidant group anthocyanin, which can also be found in red cabbage. Pretty darn cool.
