Bob's in the Kitchen - Lemon Herb Roasted Potatoes


From the kitchen of One Perfect Bite...I made these potatoes to serve alongside the roast chicken we had on Valentine's Day. I found the recipe for the potatoes on a site called Rock Recipes which you can find here. They potatoes go perfectly with any plain roast meat or poultry. They have wonderful color and I know you will enjoy them. While the potatoes have crisp exteriors, their interiors remain soft and once you taste them, I think you'll agree that they are delicious. They are also easy to make. Barry Parsons developed the recipe and he shared a tip with his readers that I think you will find helpful. Did you know that preheating the pan in which you are going to roast the potatoes, will keep them from sticking to the bottom of the pan as they bake? It worked like a charm for me. Bob's in the Kitchen - Walnut Fudge Pie


From the kitchen of One Perfect Bite...I have five desserts that I can make, and most of them use ice cream as their main ingredient. This one is a bit different. Mary found the recipe for this pie and passed it onto me. It is really simple to make because it uses a frozen deep dish pie crust to hold the fudgy filling. If you like rich chocolate desserts you will like this quick mix pie. You can serve it with whipped cream or ice cream and a drizzle of chocolate syrup. Here is the recipe.

Bob's in the Kitchen - The Easiest Ever Roast Chicken


From the kitchen of One Perfect Bite...We will be away for the weekend, but I wanted to fix a special Valentine's day dinner for Mary before we leave. We both love a juicy roast chicken with a crisp burnished skin. Mary has several recipes for roast chicken on the blog and she has been working on another for her cookbook. They are all delicious but I didn't want to use any of them for her special meal. I've seen her make roast chicken for over 50 years now, so I have a very good idea how to make a basic bird. My version of roast chicken is very easy to make and it looks wonderful on a serving platter, even if I say so myself. I served the chicken with roasted potatoes and asparagus that I cooked in the microwave. I also made a fudge pie that I'll post tomorrow. It was a nice meal. Here is my recipe.

Bob's in the Kitchen - Weeknight Slow-Cooker Chili


From the kitchen of One Perfect Bite...I pulled out the slow-cooker to make this chili today. There was some chopping to do, but the recipe is simple and once you have the ingredients in the slow-cooker, it does all the work. As a matter of fact, it does several days worth of work. I'll probably use the leftovers for lunch, serving the chili over rice one day and in baked tortilla bowls that I can fill with taco salad the next. Bob's in the Kitchen - 3 Cup Chicken


From the kitchen of One Perfect Bite...This is a Taiwanese dish that gets its name from the ratio of the three main ingredients used to make it. The chicken is always made with equal portions of soy sauce, rice wine and sesame oil. This version of the recipe is fast and easy to prepare and while it lacks the burnished glaze that make so many Asian dishes beautiful, its taste more than makes up for its plain Jane appearance. I made rice and steamed snow peas to go along with it and it made for a nice supper. The recipe for the chicken can be found here.

On another note, Mary continues to improve, but her activity is still restricted. She can't bend, lift or push and she wears a protective shield when we are out. The doctor has found no additional tears and it looks like the retina has reattached, but there is still a large gas bubble in her eye that clouds her version. It will be several weeks, possibly months, before we know how much of her vision has been restored. She sends you all her best and will be back here as soon as she has been given the all clear.
