Southwestern Tuna Wraps for Two


From the kitchen of One Perfect Bite...It was hot today. While you couldn't cook an egg on the pavement, the heat quickly wilted anyone trying to work in the sun. I wasn't in the sun, but I used it as my excuse for making such simple meals today. I managed to get bagels with assorted toppings on the table for breakfast and we had grilled pizzas for dinner. Lunch was a bit more involved, but with the help of a frozen potato soup, thawed, but served cold, and sandwich wraps we manged to keep body and soul together. The wraps are a much simplified version of the Southwestern Wraps I featured on the blog in February, and while they are easy to prepare, they don't lack for flavor. I made a pico de gallo that had some heat and I used pepper jack rather than cheddar cheese because that was what I had on hand. Needless to say, our wraps had attitude. While I like this recipe for its ease, the Silver Fox likes it for the flavor of the wraps it produces. If you are looking for something simple to prepare on hot summer days, do give this recipe a try.

Bob's in the Kitchen - Weeknight Slow-Cooker Chili


From the kitchen of One Perfect Bite...I pulled out the slow-cooker to make this chili today. There was some chopping to do, but the recipe is simple and once you have the ingredients in the slow-cooker, it does all the work. As a matter of fact, it does several days worth of work. I'll probably use the leftovers for lunch, serving the chili over rice one day and in baked tortilla bowls that I can fill with taco salad the next. Bob's in the Kitchen - Southwestern Soft Taco Casserole



From the kitchen of One Perfect Bite...This recipe produces way more food than the two of us can eat, but I decided to make it anyway. I had a plan. We'll be eating out at least twice this weekend, but I thought it would be nice to have something in the refrigerator that can be reheated for those meals we will have at home. Cooking everyday is not all that it is cracked up to be and given the right circumstances, nuking is a beautiful thing. We happen to love this casserole, and Mary makes it for family and church functions. It is easy and inexpensive to make and it's draws teenage grandsons to the table faster than bees to honey. The recipe is straightforward and it calls for ingredients that can be found in any grocery store. If you have never tried this casserole, do yourself a favor and give it a try this weekend. Bob's in the Kitchen - Mexicali Pizza


From the kitchen of One Perfect Bite...One of the things I've rapidly learned to do is to pick recipes that are scaled to feed small families. Mary and I had leftovers last night, and while neither of us particularly enjoy them, we like to get rid of them before they form a cabal and plot to take over the kitchen. While Mary leaves the cooking to me these days, she put together a list of easy recipes, so I have a map to work from and can pick what I want to make for dinner. I had a taste for pizza tonight, so I decided to make a Mexicali version that uses flour tortillas in place of bread dough. This is one of our favorite lunch dishes, and we make it often when family is visiting. It's a great dish to keep in mind when you are feeding teenage boys with hollow legs. If you are looking for a different kind of pizza, do give this one a try. The "pies" are decidedly Southwestern and I guarantee you'll have to look hard to find anything that is easier to make.
