Bob's in the Kitchen - One Pan Teriyaki Chicken



From the kitchen of One Perfect Bite...I love Chicken Teriyaki and now that I know how easy it is to make, we'll have it more often. You know, a blog is like a ravenous prima donna who demands new dishes to stave off hunger and stimulate a spoiled palate. Keeping her happy means that old-favorite dishes are pushed to the back burner and not made as often as some might like. I'm happy to report that this recipe is so easy to prepare that I'll be able to make Teriyaki whenever I have a taste for it. I used Mary's recipe, exactly as it was written, and had dinner on the table within 45 minutes. Her version is easy to make, delicious to eat and truly simple to clean-up after. Do try this! Bob's in the Kitchen - Mexicali Pizza


From the kitchen of One Perfect Bite...One of the things I've rapidly learned to do is to pick recipes that are scaled to feed small families. Mary and I had leftovers last night, and while neither of us particularly enjoy them, we like to get rid of them before they form a cabal and plot to take over the kitchen. While Mary leaves the cooking to me these days, she put together a list of easy recipes, so I have a map to work from and can pick what I want to make for dinner. I had a taste for pizza tonight, so I decided to make a Mexicali version that uses flour tortillas in place of bread dough. This is one of our favorite lunch dishes, and we make it often when family is visiting. It's a great dish to keep in mind when you are feeding teenage boys with hollow legs. If you are looking for a different kind of pizza, do give this one a try. The "pies" are decidedly Southwestern and I guarantee you'll have to look hard to find anything that is easier to make. Bob's in the Kitchen - Tuna Pate


From the kitchen of One Perfect Bite...While I don't have a dinner recipe to share with you tonight, I do have a new recipe for a tuna pate that made for some delicious nibbling while we watched the Super Bowl last Sunday. Mary found the pate in Food and Wine magazine and clipped it to make, but she was grounded before that could be done. She told me about the pate and how easy it would be to make, and since there would be just two of us for the game, we decided to try the pate rather then have the usual game day snacks. I think the pate, while strongly flavored, is delicious when served with a light rye or crusty peasant bread. Any leftover pate makes a great filling for sandwich wraps. Do try this! Bob's in the Kitchen - Game Day Chili Mac Skillet


From the kitchen of One Perfect Bite...This casserole made a regular appearance on our table when the children were at home, and while we don't serve it often these days, it has remained a family favorite. It's also a great dish to prepare for a group of fellow football enthusiasts when you need something that is fast, easy and inexpensive to serve on game day. The dish, which is made with common pantry items, takes 10 minutes to prepare, 25 minutes to cook and it is made in just one pan that can also be used for serving. You can alter heat and spices to your personal taste, and while many will consider it heresy, you can use any cheese you like. I do hope you'll try this for your own family.
