Table for Two Recipes

I thought today would be a great time to reprise some of the recipes I've featured that are designed to feed just two people. One of the most difficult adjustments to make as the nest empties is learning how to cook in smaller quantities. At least it was for me. It sounds simple enough to do, but if you've spent years feeding the immediate world, there will be many a slip 'tween the cup and the lip and lots of leftovers in the fridge to boot. I hope these recipes will ease the transition for those of you who are watching the chairs at your table empty. Here are some of the recipes I used to get from there to here.

Aromatic Shrimp Stir Fry for Two                                       Glazed Korean-Style Filet Mignon

Creamy Orzo with Feta and Tomatoes                                           Dingle Fish Pie

            Smothered Eggs in Spoonbread                                                              Bibimbap

Shrimp Pad Thai for Two                                       Orange and Rhubarb Oatmeal Porridge

Thank you for this collection. Yes, scaling back on how much to cook is soooo hard. Take care and I hope you are doing very well.

Mary, Very thoughtful! We are a 'table for two' 95% of the time. I see several recipes that would fill our needs. Thanks and Take Care, Big Daddy Dave

Thank you for this richly decked table for two!

My mother cooked for ten, eight children plus parents. I often helped and when I moved away, I had a hard time adjusting to smaller meals. The small portions simply never looked as if they would be enough, so I always added more than I really needed.

Such a helpful post ... I still cook like there are more than the two of us. (It is good we like left overs.)

Fondly,
Glenda

Great ideas, I too have a headache cooking for two and always ended up eating leftovers from miscalculations!

I'll be bookmarking this post, as I am always happy to find recipes that are tailored to two servings... being retired, on a budget, and not being all that fond of leftovers that last more than one day, a pared down recipe is highly attractive!

Hope you're healing well, dearie!
